APRES SPICY | CHEF ESTHER CHOI

May 22, 2025

We've enjoyed a number of dishes at Mokbar, Chef Esther Choi's restaurant which has phenomenal Korean dishes that are full of flavor. In addition, we always enjoy seeing her whether she is judging or in the midst of a cooking competition on Food Network or other networks.

We were invited to hang out with her as well as to enjoy an immersive experience at a pop-up with Listerine for their Clinical Solutions Sensitive Teeth which allow those who suffer with teeth sensitivities to have a moutwash that they can use. At this event, we enjoyed a number of dishes curated by her as well as to talk with her a bit about what led her to being a chef, why she loves Korean cuisine and S2 of 24 in 24: Last Chef Standing!

ATHLEISURE MAG: We are so excited to be able to chat with you as we have been fans of yours between your restaurants as well as the shows you have been on.

CHEF ESTHER CHOI: I’m so thankful for your support! We have to support each other!

AM: Absolutely!

What was the first dish that made you remember why you fell in love with food?

CHEF EC: I think for me, it might not be a specific dish, but an ingredient and it's kimchi.

AM: I love kimchi.

CHEF EC: Yeah, awesome! You'll have some tonight.

AM: I was so hoping.

CHEF EC: I mean, I love kimchi. I grew up eating kimchi, and it reminds me of not only like my family, but like my grandmother specifically. She taught me how to make it, and kimchi is something that you kind of - there's not like a real recipe for it.

AM: Right.

CHEF EC: It's really more about, like, the true nature of like cooking. So, I think, for me, it always kind of gave me those feelings, which is why, I'm so obsessed with it. It's pretty much on every item on my menu, and it's something that, I, you know, treasure. It's not only like a food item, but also like a culture. I like to say that kimchi, it's a way of life.

AM: Yeah.

CHEF EC: So, I'd say, that's my dish - forever.

AM: When did you realize you wanted to be a chef?

CHEF EC: I loved food, always like my whole life. I grew up cooking with my Grandmother. Food was such an important part of my family and growing up. When I was thinking about what I wanted to do with my life, I knew that it had to be food related. I didn't know if I wanted to be a chef specifically at the time, but I think the path of like going into food led me to want to be the closest to it, which is the chef.

AM: You have amazing restaurants.

CHEF EC: Thank you!

AM: Can you tell us a little bit about each of your restaurants?

CHEF EC: Yeah, of course.

So, the first restaurant I started when I was 28 was Mokbar, and that is in Chelsea Market, and it's a tiny little noodle shop in, one of the busiest markets in New York City. So, like, I wanted to bring something that's totally unique, but also being true to who I am and my heritage. So I chose this concept of doing Korean style Ramen, which you'll actually have some tonight.

AM: Very excited about this!

CHEF EC: Yeah, it's not your traditional Ramen, but like, it's Ramen infused with a lot of Korean ingredients, so it's kind of like your first step into trying Korean food, and so that has kind of been my philosophy and motto throughout, like my entire career and all my restaurants kind of go by that, where it's like, I want people to fall in love with Korean food and make it into their repertoire. So, like if you're ordering Chinese every week and Sushi, why can't you order at Korean?

AM: I’ve been known to have it 3 or 4 times a week. It is one of my favorite cuisines!

CHEF EC: Really! Oh my God! I love it. I love it. So, what’s your favorite Korean dish?

AM: So tough! I love Korean Fried Chicken, of course kimchi and I’m always down for kimpbap!

CHEF EC: In addition to kimchi, we're doing Korean Fried Chicken tonight.

AM: Yum! With kimchi, I literally will have it multiple times a day.

CHEF EC: I love all of this! You should be Korean!

And it's so healthy, too!

All of my restaurants are inspired by like Korean cuisine heritage, but they're done in more modern ways. So I do have a sit-down restaurant called GAHM in Brooklyn, and that one is definitely like full service.

The one that I started in Chelsea Market Mokbar, we have now several locations, and it's more of a fast casual. So, grab and go. We just opened our 5th location in Vegas a few months ago. We're very excited definitely my food concept is always going to be Korean forward.

AM: Why did you want to partner with Listerine?

CHEF EC: I would say this partnership is really special for me because I mean, there's a few reasons. First is because Korean food is, like, we're very into temperatures like the hot food has to be very very hot. You can see, you know, when you order a Korean dish, it always comes out like piping piping hot, almost like boiling at the table.

And then cool. Things are like, super cool, so you know lots of people who come to eat food, I want them to experience it fully without being disrupted by like having sensitive teeth, which is a big thing. So partnering with Listerine, it was like the perfect marriage. So, curating a menu that, can you know, kind of, let you think about all those sensitivities, it's like a perfect match.

Korean food also is very garlicky and very, you know, kimchi is very pungent.

AM: Everyone needs to have it!

CHEF EC: Yeah, exactly. So, there needs to be like Listerine always around after eating Korean food, so I just felt like, I'm like, what a perfect partnership.

AM: I love that!

You're back hosting S2 of 24 in 24: Last Chef Standing, how excited are you?

CHEF EC: It's crazy - I thought S1 was crazy, but S2 is even crazier! Which I don't even know how that's possible. But, um, yeah, this season's gonna be super exciting, especially because of the lineup of chefs that are competing. It's insane with the list. There's a lot of drama around it, Lots of emotions, so it's like, real, true, I'd say the closest to reality as opening up a restaurant as it can be!

July 12, 2023

This month, our editorial takes us to a hotel group that has been our favorites as we have stayed at their properties in Seattle, DC, and Philadelphia. In addition, we have gone to their hotels here to attend a number of functions there from launches, editor events, and more. Kimpton Hotels are always a great place to go to as the vibe always feels so comfortable and has a boutique essence to it. When you stay as a guest, you can enjoy their complimentary wine hours that take place in their lobby, they have yoga mats in their rooms, and they always have great restaurants on their properties as well.

Kimpton Hotel Eventi has always been a lot of fun whether we're attending a preview or meeting up with friends to grab a quick bite which turns into an epic night out! Because we've frequented it so much, for this month's editorial, we thought it would be perfect to take our readers inside one of their suites known as Veranda which has a large L shaped balcony, a living/sitting room, large bedroom, and 2 bathrooms. Whether you're having a weekend in with friends, enjoying it with your significant other, planning a wedding event, or anything of that nature - this is a great suite to make memories!

Our shoot looks at our models enjoying a weekend in by taking in the city and taking a moment for themselves. They're rocking a new line that we excited to share that is created by us known as ATHLEISUREVERSE! With pieces that are soft, various colors, and styles - there is something for everyone! In addition, this shoot includes a number of our favorite accessories that you should pair with your favorite looks as well as some treats that we've been fans of from our issues! Now that you have seen a number of the features of Kimpton Hotel Eventi's Veranda Suite which is quite spacious! We wanted to know more about the property as well as the neighborhood so that you can plan accordingly for your next visit!

ATHLEISURE MAG: When did Kimpton Hotel Eventi open?

KIMPTON EVENTI HOTEL: Kimpton Hotel Eventi debuted in 2010.

AM: Before we talk about Eventi specifically, we have had the pleasure to stay at several Kimpton hotels as well as to attend events that are held there, including this property. For those that aren't familiar with Kimpton Hotels, can you tell us about what a guest can expect when they are staying at these properties in general?

KHE: The Kimpton brand is known for its unique, design-driven properties with warm, genuine service. Our hotels have exciting restaurants and aim to create moments of connection with guests.

AM: Tell us about the art at Eventi?

KHE: Kimpton Hotel Eventi features a variety of works sourced and installed under the creative direction of Reunion Goods & Services by Art Consultant Kyle DeWoody, Associate Art Consultant Laura DVorkin, and design team We Came in Peace. Extending from the hotel's original design rich in texture and depth with a variety of fine art pieces from renowned artist Barbara Nessim, the new collection introduces a mix of both established, younger artists and emerging artists with visibly promising talents.

Moving beyond the traditional decorative intention, this collection attempts far more conceptual approach by showcasing edgy and thought-provoking works including Kwangho Lee's hanging light installation made entirely out of electrical wire, and a Tony Matelli mirror - which is made to look dusty through a technique using layers of urethane. The dynamic collection also features stunning works by artists including Lorna Simpson, Alex Katz, and Ernesto Leal that flow throughout the lobby and fill spaces within The Vine and L'Amico.

AM: Our editorial shoot took place at the Eventi which is in Chelsea. What can you tell us about the property in general and how it connects to the neighborhood?

KHE: Kimpton Hotel Eventi’s location in the heart of Chelsea – on 6th Avenue between 29th St. and 30th St. – places guests conveniently in the midst from some of the city’s most prominent art galleries, boutiques, nightclubs and restaurants. Being located near Chelsea Market and the High Line allows easy access to popular attractions, and travelers are also within a few blocks of the nearby NoMad and Flatiron neighborhoods and landmarks including Times Square and the Empire State Building.

AM: Tell us about the 3 restaurants, L’Amico, The Vine, and Skirt Steak that are at Eventi which can be enjoyed by those on vacation, staycations or just hanging out in the neighborhood.

KHE: The three on-site restaurants, all helmed by Chef Laurent Tourondel, offer visitors a variety of dining experiences. L’Amico serves Italian-influenced American cuisine inspired by the simplicity of a countryside stroll and a wood-fired meal; The Vine’s welcoming environment complements locally sourced, vegetable-centric French dishes; and Skirt Steak harkens back to old-school steakhouses, serving only grilled skirt steak (or a cauliflower steak), salad and fries, followed by a rolling dessert cart.

AM: We like that regardless of the Kimpton properties that you’re staying at, hotel guests can enjoy complimentary morning coffee and tea to start your day as well as the hosted evening wine hour that’s in the Lobby Living Room. Can you tell us about this and why these have been an amenity for guests?

KHE: We aim to provide opportunities for connection, and this often happens over food and drinks. Beyond giving guests a morning or evening beverage, we’re creating space where visitors can relax, get to know one another and build a sense of community. Our wine hour, a core part of our programming, was started by Bill Kimpton and is practiced at every Kimpton property worldwide.

AM: We enjoyed having our shoot in one of your suites. For guests that are staying at the hotel, what guestrooms and suites are available?

KHE: Our guestrooms range from standard King and Queen/Queen rooms to our specialty suites featuring balconies, Jacuzzi tubs or pool tables. Each room in the hotel offers a spacious respite amid the city, floor-to-ceiling windows to take in the cityscapes, and design emphasizing brightness and clean lines.

AM: What amenities are offered in these rooms?

KHE: All guests receive complimentary morning coffee and tea and a hosted evening wine hour. In addition, there is a yoga mat in every room, mini-bar service, valet laundry service, and access to public bikes to explore the city.

AM: For those looking to maintain their fitness routines, how can they do so at Eventi?

KHE: In addition to our onsite 1,000 square foot 24-hour fitness center that includes Peloton bikes and other workout equipment, we also offer custom designed PUBLIC bikes and yoga mats in every room, free of charge.

AM: For those traveling with their four-legged friends, tell us how this hotel is pet-friendly as well as Wag! Premium.

KHE: Kimpton Hotel Eventi welcomes dogs and provides them with in-room water bowls, pet beds and courtesy bags for walks. We don’t charge a deposit or cleaning fee for bringing in dogs, and have no size or weight restrictions, nor a limit on the number of pets allowed. Our concierge keeps a list of pet-friendly restaurants, parks and groomers as well.

Guests receive complimentary access to Wag! Premium, meaning they receive 10% off of services, no booking fees, and round-the-clock access to licensed veterinary professionals. If a walk is arranged, travelers can leave a key at the front desk to be handed over to the dog walker upon their arrival.

AM: In addition to complimentary Wi-Fi, you keep guests connected with access to Press Reader (which Athleisure Mag is on this platform), are there other digital amenities that you offer?

KHE: Press Reader provides access to a vast library of local, regional and national newspapers and magazines, allowing guests to keep up with the news during their stay. Each guestroom also includes a Crave tablet that guests can use to set wake up calls, request housekeeping items, get information about local attractions, use as a TV control and channel guide and more. All TVs include Chromecast, allowing guests to stream from their personal devices.

AM: Tell us about the Kimpton Library.

KHE: The Kimpton Library allows guests to borrow from a curated collection of books on property, so they can pack light and still enjoy some of the most popular literary titles.

AM: For those that may be getting in a bit of work whether they’re there for business or simply need to do a few things, what is available at your business center?

KHE: We do not have a formal business center, but our team is happy to assist with small printing requests. Our concierge can also guide guests to nearby storefronts and libraries with extensive offerings.

AM: Tell us about the Public Bikes that are available.

KHE: Our PUBLIC bikes are custom-made. Guests are invited to take them on a spin at leisure and can use our Manhattan Waterfront Greenway map as a guide.

AM: NYC is always great to visit regardless of the time of year; however, the summer is always a lot of fun. What packages are you offering for those that are looking to book?

KHE: This month we are bringing the fictional world to life with a new Dream Blades offering. Taking inspiration from retro neon sportswear and summers in Malibu, we are launching a limited-time complimentary roller blade lending program for hotel guests looking for a fun outdoor activity. Hotel guests will be gifted neon retro skating accessories, including candy-colored sun visors, sweatbands and fanny packs, as well as the option to rent rollerblades.

We also have our Celebrate Summer offer, allowing travelers to make the most of their time to the city by enjoying a picnic in the park or taking surf lessons at one of the city’s beaches.

AM: For residents who are looking to enjoy a staycation, why should they book at Eventi?

KHE: So often, New Yorkers forget to be tourists in their own city. Kimpton Hotel Eventi is located in a central spot allowing guests to take in some of the city’s most popular attractions, whether they’re visiting for the first time or the twentieth. Our rooms also offer a peaceful escape above the hustle and bustle of Manhattan, making it a great spot to stay in the city while getting spot to stay in the city while getting out of a mundane routine.

AM: The hotel’s location is in the heart of several neighborhoods that are a must visit!

Although the hotel is great for those that may really want to stay in, there are a number of things to do outside of it!

For the solo traveler: where should they grab a bite for people watching, where should they shop, and what's an attraction/gallery/park they they should visit?

KHE: L’Amico on-property is the perfect place for a solo traveler to sit at the bar and people watch the world around them. We are centrally located, close to the shops in Chelsea, Flatiron District, and Herald Square areas. We are minutes away from Broadway and the theater district - perfect for a solo traveler to take in a show.

AM: Our shoot focuses on our models enjoying a getaway so for those booking their girl’s trips whether a staycation or traveling to the city: where should they go out for brunch, where should they go for a spa session, and where should they go for a bit of nightlife?

KHE: La Pecora Bianca and Oscar Wilde offer great brunches nearby. We are located near Juvenex Spa, a day spa on West 32nd known for their Korean-style Salt Glow Scrub. The Vine has a great wine and cocktail list for guests.

AM: For the business traveler who will be with a group of their colleagues: where should they go for a drink to decompress after a day of sessions, what’s a great spot for sightseeing and to take in the city, and what’s a great place for a group exercise?

KHE: The Vine’s cocktails are expertly curated and perfect to decompress after a long day. We’re in the heart of Manhattan, blocks from the Empire State Building, Chelsea Market, The High Line, Times Square and more. All are great for sightseers. We are located minutes away from a variety of boutique fitness studios from yoga to boxing, and more.

THE ART OF THE SNACK | THE OVAL

March 23, 2023

There's nothing like having a truly unique culinary experience where you know that the utmost attention to detail is being done when you're seated for your next meal. We headed to Chelsea Market in NYC, to find out more about The Oval and how they present their pasta dishes to enthusiasts of this cuisine. We had a moment to talk with Giuseppe Di Martino, CEO and President of Pastificio Di Martino, to get to know more about this restaurant and where it sits in the larger space that it occcupies.

ATHLEISURE MAG: You’re a 3rd generation pastaio. Can you tell us what that is and you’re the CEO & President of Pastificio Di Martino which began in 1912, can you tell me about the company?

GIUSEPPE DI MARTINO: The Oval, the interactive chef’s tasting table at La Devozione has been named one of the Top 50 Italian Restaurants Abroad by 50 Top Italy and is the first New York restaurant to be awarded three forks by Gambero Rosso, Italy’s top food guidebook. The Oval was conceptualized by me, a third generation Owner of renowned Pastificio Di Martino, to express his life’s devotion to pasta. The offerings are designed by Chef Peppe Guida (Michelin-starred Osteria Nonna Rosa), then reinterpreted by The Oval’s Executive Chef Alessio Rossetti (Tony May’s SD26 and Blackbarn) who uses innovative techniques and top seasonal ingredients to transform classic Italian recipes into avant-garde dishes. Chef Alessio pushes flavor boundaries in a multicourse format; the experience runs like an incredibly paced and well-oiled machine, plated with the finest Italian tableware and silverware to accent the lavishness of the meal. Each pasta course is cooked in its own pan and served al dente and a la minute, underscoring the duo’s commitment to even the smallest detail.

AM: You’re known as a heritage pasta company and this is the first brick and mortar that you’ve had in the US. Why was Chelsea Market the perfect destination for this multi-concept destination?

GDM: Because it is a destination where 50 million foodies pass by every year. It is also a great source of inspiration because of the multiethnic presence of ingredients. We have a dedicated exclusive main entrance at W 428 on 16th street for our guests but we like to be a genuine part of the neighbourhood so the entrance from the course of the market is also possible as we feel part of Chelsea Market and what it represents.

AM: There are over 126 distinct pastas – what is the process that goes into creating a new pasta and how do you decide how a shape would work with a specific ingredient or sauces?

GDM: The 100 shapes of pasta are an answer to the need of intrigue to the creativity and fantasy of Italians when it comes to food. Italians use seasonality and territory technique to have pasta everyday on their tables. To be knowledgeable about the pairing of a shape with a recipe is a process that is natural to pasta natives but we invite everybody to come to the store to meet our pasta genius that will tell you every secret about it and so that you can really enjoy the richness and the variety of the offer.

AM: The Oval is a restaurant that has a beautiful 30-seat bar. What can you tell me about who designed whit and why you wanted to seat guests in this way?

GDM: The Oval is a project that brings pasta and the person that will eat it at the center of the stage. The pan when pasta is finished it’s closed to the diner than to the chef. The dish will be served second after being cooked and finished in order to catch a few seconds in which the dish is at its best. You will be watching the recipe being made step by step and learn how to cook and serve interesting and innovative recipes such as the most traditional carbonara.

AM: The restaurant also has an open kitchen. Why was that important to you?

GDM: The transparency during the cooking process and the interaction with the chef are a crucial advantage when you cook pasta from scratch. Every dish served is cooked from scratch and pasta is cooked express each and every time. The chef has no intermediary with guests so it can read the reaction and accelerate or retard the next plate.

AM: Michelin Chef Peppe Guida’s menu for lunch and dinner has a pasta tasting menu, pasta for vegetarians, those who are looking for meat and the sea. Can you tell us more about the menu?

GDM: Our menu goes from traditional ingredients like lemons from Sorrento olive oil tomato from Campania Sicily and all south of Italy but also the best meats you can find in town from small distributors such as wild boar, lamb, duck, beef pork, pharaoh and imported red shrimp from Mazzara, lobster from Canada, fresh tuna belly from Sicily and sea urchin from California and Japan together with fresh fluke and snapper from Nord Atlantic and all the fresh vegetables from Union square fresh market with priority to organic local seasonal producers.

AM: For the tasting menu, is this seasonal and how does lunch differ from what is offered for dinner?

GDM: For both lunch and dinner we offer a la carte menu along with 7 course tasting menu, La Tradizione 5 course and A Peek 4 course; The seven course is the highest expression of creativity and technique and has made as be awarded 3 forks from Gamabero Rosso the most prestigious food guide in Italy that for the first time has awarded the 3 fork in NY. It is inspired to fine Italian dining and seasonality. The rhythm of the menu is studied so that the guest can have a total experience in 90 minutes. DISHED are very refined and technically complex it takes 6 to 8 weeks to develop a menu that last 9 weeks, this makes the Oval a continuous lab in search of beauty and taste. The traditional 5 course menu brings everlasting Italian classic to fine dining experience. A peek menu it is like the word says a stort taste of the 7 course tasting menu it is a way to let customers get acquainted to our vision of cuisine.

AM: What are 3 appetizers that you suggest?

GDM: We have developed and produced a salad that is enriched with duck prosciutto, or red Mazzara del Vallo shrimps or lobsters. We will be serving as an appetizer the Sogno Rosa a signature dish of great success that is coming out from the tasting menu and will be finally available a la carte.

AM: What are 3 desserts that we should try when we come with friends and family?

GDM: The seasonal Oval desserts are chestnuts mousse with port wine reduction and vanilla oil and toasted elzenhout. Millefoglie with red oranges mousse and white chocolate - Coffee Jumbo shells with elderflower mousse.

AM: Tell me about your wine program. What are 3 of your favorite wines that you offer and what pasta would you pair with each one?

GDM: Our wine program is centered on small and independent producers mainly. Italian wines are obviously very well represented in all the 21 regions with a very deep focus on Piedmont, Tuscany, and Campania - our region. We have one the largest collection of champagne in NY, over 50 producers are always available from every corner of the champagne regions covering different style and seepage, we give higher attention to RM producers that reflect the territory and the tradition of the area; a great attention it is also given to Borgogna that it is closer with it’s bouquet of the tastes and scents.

I will start with champagne Henri Goutorbe 2008 special club 70% pinot noir grand cru from AY 72 months on lees, incredibly complex and persistent, it will be lovely paired with our pasta mista with potatoes saffron and sea urchin.

Fiano Pietramara I favati 2019 one of the highest expressions coming from Campania Irpinia region, Fiano is very complex elegant persistent white wine with agrumes (citrus), toasted almonds thousands flowers honey and an acid backbone mixed with a nearly salty minerality that will make every sip a perfect match with our Linguettine with red shrimp from Mazzara del Vallo and his head bisque and Campari.

ATHLEISURE LIST | A TAVOLA

February 18, 2023

La Devozione opened November 2021. It's an authentic pasta restaurant and guests will experience an authentic Italian cucine and a in a very comfortable atmosphere. They are located inside of Chelsea Market.

This was a dream of third-generation pastaio Giuseppe di Martino, CEO & President of Pastificio Di Martino (est. 1912), La Devozione is an ode to pasta brought to life in New York City. It is the heritage pasta company’s first brick-and-mortar experience in the United States. Their multi-concept pasta destination includes a retail shop, coffee and cocktail bar; an elegant. 30-seat oval pasta bar, and more casual dining seating at A Tavola, inviting guests to discover over 126 distinct shapes of their Pastificio Di Martino's PGI Gragnano pasta firsthand.

A Tavola offers a full pasta menu that includes some appetizers, their Seasonal and Untouchable pasta recipes and finally a choice of a few desserts. Located within La Devozione’s pasta shop area with additional seating outside (coming Spring 2023), A Tavola is La Devozione’s more casual, á la carte menu offering a selection of informal trattoria-style fare including starters, rotating seasonal pastas and signature Di Martino favorites like "The Untouchables."

All around this area are their products displayed for sale: 126 different pasta shapes displayed all along the side wall, some beautiful ceramics made in Italy and hand painted displayed on a big table in the middle of the restaurant together with some books with pasta recipes as well as some colorful and beautiful Moka pots. In addition, their tin boxes are designed by Dolce Gabbana.

We suggest trying their signature dish La Devozione (Spaghetti, tomato sauce, basil) a classic Neapolitan recipe that shows the versatility of their pasta, Candele con ragu napoletano and Ziti alla Genovese. The last two recipes are typical Neapolitan recipes.

Led by Bar Manager Cristhian Rodriguez, La Devozione's cocktail bar offers guests cocktails, wine and beer. Here, guests will find twists on classic cocktails that celebrate Italy's appreciation for food and sustainability. The Cocktail menu changes often throughout the year, right now one of our favorites is the Winter Brumble (Vodka, Old Duff Genever, lemon, Cranberry-Hibiscus, and winter spices), Let’s Get It Started (Tequila Marolo Milla, Honey, Ginger and Lemon, and the Espresso Martini (Vodka, Amaro della Sacra, black coffee liquor, hazelnut-miso and espresso).
