COVERING THE BASES | BRAYAN ROCCHIO

During this time of year, we always enjoy catching our favorite basbeball games. We caught up with Cleveland Guardians’ Shortstop Brayan Rocchio who is known for his switch-hititing abilities and is known as The Professor. We caught up with him at the midpoint of this season to talk about his love for the game, how he stays in shape during the season, and the importance of eye health especially when it comes to him playing on the field!

ATHLEISURE MAG: When did you fall in love with baseball and what’s your first memory of playing this game?

BRAYAN ROCCHIO: I’ve loved baseball as long as I can remember. My earliest memories were when I was just starting, playing at Cocodrilos Sports Park in Caracas Venezuela at the age of 3.

By the time I was playing in the Chucho Ramos minor league, I was having the best moments of my life. I remember my family and friends would always come out and support me, which reinforced my passion for the game.

AM: When did you realize that you wanted to go pro and do this as a career?

BR: At first, I wanted to be a veterinarian. When I was training at Cocodrilos (Crocodile) Sports Park, some of my friends played a prank and told me there were real crocodiles living in the neighborhood. I’ve always loved crocodiles since then – it’s random, I know – but I’m drawn to them. I told my mother that I wanted to become a veterinarian, and for a while, I seriously considered it. But my family has a strong athletic background, and as I fell more and more in love with baseball, sports won out.

AM: What do you love about playing this game?

BR: The most satisfying part of the game is just trying to win for the guys around you, competing by your side every day. I don’t think about my personal stats or focus on myself. I like making a difference so my team can go as far as possible and win.

AM: We are always looking at adding various fitness routines into our workout. What are 3 workouts that you do to assist in optimizing yourself in the sport?

BR: My training is designed around optimizing force production, joint sequencing, and movement efficiency, that’s specific to the demands of baseball. With my coaches, we work on rotational power, deceleration capacity, and segmental timing to improve energy transfer from the ground up.

Three exercises that are always part of my training are barbell hip thrusts, rear-foot elevated split squats and rotational medicine ball work. They all support the movements I use in baseball and help me become a stronger, more explosive player.

AM: You are known as The Professor. How did you get that name and what does it mean?

BR: I was playing in the Dominican Republic when I was 16, and I was at shortstop when a ground ball hit the hole. I made a diving play and was able to throw the guy out at first.

When I got back to the dugout, my coach at the time told me I made the play like a professor. Then the name just stayed. People started calling me El Profesor after that.

AM: Why did eye health become so important to you especially when it comes to athletic performance especially when you are navigating your games?

BR: Being able to see clearly is crucial in baseball. It’s a really difficult game, you’re tracking a 100mph grounder, reading spin and reacting instantly. Your body must be at 100%, including your eyes.

But for years I didn’t know what was going on with my eyes – they always felt dry and my vision would get blurry, especially while playing at night. I went to my doctor about it - he said I have dry eye disease8 and prescribed a product called MIEBO® (perfluorohexyloctane ophthalmic solution). Since treating my dry eye symptoms, I now feel more confident in my performance.

AM: Can you tell us about dry eye disease and how are you managing it?

BR: Most people who have dry eye disease, including me, have tears that evaporate too quickly. It’s actually the number one cause of dry eye. Healthy tears last for 10 to 15 seconds. Mine only lasts 5 seconds, which leads to irritation, especially in places like stadiums where you’ve got wind, dust and bright lights. Now I use MIEBO as part of my daily routine four times per day. My eye doctor told me that MIEBO works by forming a protective layer on the eye’s surface that helps reduce tear evaporation and maintain that moisture on the eye. However, the exact way MIEBO works is unknown.

AM: How does eye health fit into wellness and recovery routines that you implement throughout the season?

BR: Eye health is one of the biggest parts of my wellness and recovery routine. Just like your body needs rest, so do your eyes. I take care of my eyes during a game. I also make sure they get a lot of rest before and after games and drink plenty of water to keep my eyes hydrated.

MIEBO® (perfluorohexyloctane ophthalmic solution) is used to treat the signs and symptoms of dry eye disease. Do not use if you are allergic to MIEBO, o not use if you are allergic to MIEBO, remove contact lenses before using MIEBO and wait for at least 30 minutes before reinserting. It is important to use it exactly as prescribed.

AM: Here at Athleisure Mag, we have a team that includes those that are taking images, looking at images, graphic work, selecting garments and focusing on matching hues and it’s a lot of eye work - what can we do to support our eye health?

BR: I love playing video games to relax, but that’s another activity that can strain your eyes. For activities like baseball, or staring at a screen, you can focus so hard you forget to blink. If you’re looking at a screen for a long period, I think it’s important to take a break and look away to relax your eye muscles. And it’s even more important to see an eye doctor regularly. If your symptoms keep bugging you, and artificial tears aren’t really cutting it, it might be time to ask an eye doctor if you have dry eye and if you can try a prescription like MIEBO.

AM: With MLB All Star Weekend behind us, we are now in the back half of the season! Tell us about your expanded role at the Cleveland Guardians and how are you approaching it mentally and physically?

BR: The team is having another great year all around and we feel really good about how we’re performing. The second half of a long season is where you have to lock in even more and keep the same intensity as you push for the postseason because games get tougher and the playoff race gets tighter. I’m working around the clock to help my team however I can.

AM: How do you achieve the balance of taking personal time for yourself when you’re in the midst of baseball season being on the field as well as traveling for games?

BR: Baseball is such a long season and there aren’t many breaks, so finding time to just enjoy being around your teammates, or finding small activities that can help you relax in your down time is really crucial.

PUTTING ON THE SPRITZ | TAVOLA

Life is hectic and having a great meal that transports you to culinary destinations is always a welcoming feeling! This month, we had a great meal at Tavola in Hell’s Kitchen that is know for its Italian, Roman, and Sicilian cuisine! In addition to being able to enjoy an array of dishes, we sat down with Nick Accardi, owner of this restaurant to find out more about the history of the location, the restaurant, and their incredible menu!

ATHLEISURE MAG: Before we delve into Tavola, can you share a bit about your background, how you came to the restaurant industry and kitchens you worked in?

NICK ACCARDI: I was raised in a family devoted to food, and my earliest years were spent absorbing the discipline and instinct that come with growing up around chefs. My mother and grandmother were my first teachers, each bringing her own interpretation of Sicilian tradition to the table. Later, apprenticeships alongside Basque and Italian chefs broadened my palate and introduced me to techniques I couldn’t have discovered on my own.

AM: Tavola’s location has a history of its own. Can you tell us about it?

NA: Tavola occupies a space with real history. It was once home to Manganaro’s Grosseria Italiana, a beloved importer of olive oil and cheese that anchored this neighborhood for well over a century. Stepping into that legacy was something I took seriously, and I wanted Tavola to honor it while establishing its own identity.

AM: What led to you launching Tavola and can you tell us about the cuisine that is offered?

NA: My journey began in 1988 with my first restaurant, Cola’s, in Chelsea. Years later, I wanted to bring something more personal to Hell’s Kitchen, a reflection of my own heritage. Tavola is built around the regional cooking of Sicily, Puglia, and Rome, with deep ties to my family’s roots in Castelvetrano.

AM: Tell us about the ambiance of the restaurant and what guests can expect when they come in to dine!

NA: The atmosphere at Tavola is warm and unpretentious, the kind of place meant to be lingered in. At its heart sits our wood-burning oven, imported from Naples, which shapes not only how we cook but the entire character of the room.

AM: When we chatted with you, you talked about Sicilian as well as Roman cuisine. Can you tell us about the ingredients and foods that are indicative of these cuisines?

NA: We take great care in sourcing ingredients that speak to these regions authentically, including single estate Castelvetrano olives and the olive oil I import myself. We were also the first to bring Tumminia flour to New York, an ancient Sicilian grain that forms the foundation of our Black Bread, baked fresh daily.

AM: In looking at Antipasta, what are 3 that you suggest that we should have our eye on?

NA: I’d direct guests toward our Sicilian arancini, our fresh burrata, and our eggplant caponata bruschetta.

AM: You also sent a flatbread that is so enjoyable to have when you are having the Burrata or Salumi - can you tell us about this and how is it so light?

NA: That’s actually our focaccia. It’s baked to order in our wood open at an intense, quick heat, which is precisely what gives it that airy, delicate quality rather than density.

AM: The pastas were so flavorful, light, and really made you think of these dishes as those that are seasonless that we will love year around!

What are 3 dishes that you suggest that we should have with friends and family?

NA: Our gnocchi is offered in several forms, Gorgonzola, Sicilian trapanese, and bolognese. We’re also known for our pappardelle with wild boar or veal ragù, as well as our lasagna Nerano.

AM: For Entrées, what are 3 that we should be thinking about for future visits?

NA: I’d recommend our double center cut pork chop with wild porcini mushroom sauce and roasted rosemary potatoes. I’d also suggest our Aragosta Fra Diavolo, a Brazilian lobster tail with homemade Fra Diavolo sauce and clams. And worth mentioning, we offer a whole fish as a daily special that changes regularly, served with our signature Sicilian caponata.

AM: There were so many options and when we looked at Pizze on the menu, it was hard to choose but I’m glad you gave us a bit of a sampler! What are 3 pizzas we should think about having?

NA: I’d recommend the Margherita, composed of tomato, fresh mozzarella, and basil. The Medina brings together figs, Gorgonzola, sesame, and herbs. And the Cacio e Pepe features pecorino cheese and black butcher pepper.

AM: Of course, ending a meal with something sweet, what are 3 from the Dolci portion of the menu that we should think about having?

NA: Guests should try our homemade cannoli, made with ricotta cream, our strawberry and blood orange Sicilian cheesecake, and our pistachio gelato with an amaretto crust.

AM: Prior to visiting, we were on your IG and you have an array of spritzes which is perfect for this time of year which is perfect for this time of year when it’s steamy out, tell us about the spritzes that you offer!

NA: We offer a Sicilian Spritz, Aperol infused with blood orange and rosemary and aged in oak barrels. There’s also our Amalfi Spritz, a blend of limoncello and Prosecco, and our San Bitter Spritz, an Italian nonalcoholic soda that we serve both on its own and incorporated into a cocktail.

AM: We were also able to enjoy some amazing wines. What are 3 that we should know about?

NA: Our wine list evolves regularly and is offered both by the bottle and by the glass. Among our permanent selections, I’d recommend our Gavi di Gavi, Nero d’Avola, and Brunello. We also carry Sassicaia, a premium, top-shelf wine.

AM: For those that are Gluten Free or Vegan are there options on the menu for them?

NA: We’re well equipped for gluten-free and vegan guests. Every pasta and pizza can be prepared gluten-free, using dough we make in-house. We also offer vegan options, including vegan cheese.

AM: Tell us about your Prix-Fixe menu.

NA: Our prix-fixe menu is $19.95 and includes soup or salad, along with a pasta or entrée. A glass of wine or Prosecco can be added on at a discounted rate of $8.

AM: We love a Happy Hour, what do we need to know about this.

NA: Happy hour runs from 3:00 to 5:30, with discounted pricing on wine, spritzes, and beer, wine and spritzes at $8, beer at $7.

AM: We got a tour of the wine room, tell us about this.

NA: We also have a wine cellar available for private events, accommodating up to 28 guests.

FIGHTLAND STARZ PREMIERE

Earlier this month, we made our way to Jazz at Lincoln Center to see the premiere episode of the latest series to be released from the 50 Cent (POWER, Den of Thieves, Escape Plan franchise) Universe, Fightland! The night kicked off with words from Kathryn Busby, the President of Original Programming at STARZ. Following her talking about the show, its place within STARZ, and how excited everyone is, she introduced 50 Cent, who is an Executive Producer who brought this series to STARZ and Sky.

He shared how important it was to launch this project through G-Unit Film & Television and what boxing meant to him.

With both of these opening remarks, we saw the first epsiode of this season. At the end of the first season which was full of plenty of action, we enjoyed 50 Cent performing alongside members of G-Unit and special guests. With castmembers from this show as well as those from the POWER universe, it was a great night to enjoy this energy. We continued on to the after party which was held at PH Live at Planet Hollywood in Times Square and enjoyed more performances by 50 Cent and well as hanging out with the STARZ team.

Fightland premiered on July 31st and will drop new episodes each Fri. on STARZ and its app as well. This show is a new high-octane scripted drama set in the cutthroat, high-stakes, cash rich world of British boxing, we navigate the action in the ring as well as what takes place outside of it!

When it comes to our self-care and meeting our fitness goals, there are many ways that we can achieve it in the way that makes sene for our lifestyle. We at down with Emma Lovewell, Peloton instructor and best-selling author to talk about how she came to fitness, what she loves about it, how we can tackle going to our next bike ride, and how dental hygiene is a key component to our beauty/health routines.

ATHLEISURE MAG: When did you fall in love with fitness and when did you realize that you wanted to do it as a career?

EMMA LOVEWELL: I’ve always loved movement. Growing up, I was an athlete and a dancer, and that was my first introduction to how powerful it feels to connect with your body. But I didn’t initially think fitness would become my career. It wasn’t until I discovered indoor cycling and began teaching classes that I realized I could combine my passion for movement, music, and helping others into a profession. The ability to positively impact someone’s day through fitness is what ultimately made me pursue it full-time.

AM: Obviously, we know that you are a Peloton instructor, what are 3 additional workouts you like to do that we should consider adding into our fitness sessions?

EL: I love strength training because building muscle is one of the best investments you can make in your long-term health. I also enjoy Pilates, which helps me stay mobile and grounded. And whenever I can, I get outside for hiking or long walks—it’s great for both physical and mental wellness.

AM: For those that may not have taken a cycling class before, how can someone who is going to their first studio class be best prepared when it comes to taking a class?

EL: Remember that everyone was a beginner once. Arrive a little early so you can feel more at ease and it gives you more time to set up your bike properly. Wear comfortable workout clothes, and bring water. Most importantly, focus on having fun rather than keeping up with everyone else.

THE DIGITAL HABITS THAT ACTUALLY LEAVE YOU FEELING REFRESHED

You might check messages as soon as you wake up, spend hours on a computer for work, switch between apps during your commute, and unwind with videos or games in the evening. Fortunately, refreshing your mind doesn’t always require putting your devices away completely. In many cases, the way you use technology has a greater influence on your mental well-being than the amount of time you spend online. This helps create a healthier relationship with your digital life while allowing you to continue enjoying its many benefits.

Don’t worry about having to adopt major lifestyle changes to build better digital habits. Small, intentional adjustments to your daily routine can make your screen time feel more balanced, purposeful, and enjoyable. Here are seven healthy practices that can help refresh your mind while making the most of the technology you use every day.

Set Boundaries Around Constant Content Consumption

Many people instinctively reach for their phones whenever they have a few free minutes, such as when they’re waiting in line or riding public transportation. While this may seem harmless, constantly filling every idle moment with new information gives your brain very little opportunity to slow down. The act of setting even simple boundaries can make a meaningful difference.

For example, you might decide to check social media only during certain times of the day or avoid opening news apps until after you’ve finished important work. Once you’ve established these small limits, you can stay informed and connected without feeling like you’re always consuming something new.

Choose Interactive Digital Entertainment

Not every form of screen time affects your mind in the same way. That’s why it’s worth taking time to organize your files and remove apps you no longer use. Don’t feel bad about only following accounts that genuinely interest or inspire you. A cleaner, more intentional digital environment helps reduce distractions and creates a more enjoyable experience whenever you go online.

Protect Time for Rest and Sleep

The way you use your devices during the evening can have a noticeable effect on how easily you unwind before bed. Checking work emails late at night or watching videos until you’re sleepy can make it harder for your mind to transition into rest mode. Establish a simple nighttime routine that limits screen use before bed. You might try stopping your screentime at a dedicated hour, for instance, and then winding down with an “analog” activity like reading or meditation. Think of this as a series of activities you do to tell your brain directly that it’s time to slow down.

THE FALL IS OVER BUT THE QUESTIONS ARE JUST STARTING

A fall can happen in seconds. One moment someone is walking through a store, parking lot, apartment building, or office, and the next they're on the ground trying to understand what happened.

But while the physical event is over almost immediately, the questions can continue for much longer.

Was there water on the floor? Was a stair broken? Did poor lighting hide a hazard? How long had the dangerous condition existed? Did anyone know about it? And perhaps most importantly, what injuries did the fall actually cause?

Those questions can become central after a slip and fall. The answers often depend on evidence that may disappear quickly, which is why understanding the condition that caused the fall can be just as important as documenting the injuries afterward.

What Caused the Person to Lose Their Footing?

The first question sounds simple: Why did the person fall? Sometimes the answer is obvious. A drink spilled across a grocery-store aisle may create a slippery surface. A broken stair can cause someone to lose their balance.

Other hazards are easier to miss. Uneven pavement, loose carpeting, potholes, debris, damaged flooring, missing or defective handrails, and poor lighting can all contribute to falls. Mission Personal Injury Lawyers identifies many of these conditions among common causes of fall accidents.

The exact location matters too. A small change in floor height might be difficult to notice in a dim hallway but obvious in bright daylight. Water near an entrance may create different questions depending on the weather and whether mats or warnings were present.

Identifying the hazard is the starting point because simply falling on someone else's property doesn't automatically establish that the property owner did something wrong.

Did the Property Owner Know About the Problem?

Finding a dangerous condition is only part of a premises liability investigation. Another important question is what the property owner or responsible party knew about it.

Sometimes there may be evidence of actual knowledge. An employee might have noticed a spill but failed to clean it, or a tenant may have previously complained about a broken stair.

Other cases involve what is often called constructive notice. At a high level, the question can involve whether a dangerous condition existed long enough or under circumstances where it reasonably should have been discovered.

Timing can therefore become extremely important. A spill that occurred seconds before someone fell creates a different situation from one that had remained untouched for a substantial period.

Inspection procedures, employee testimony, maintenance records, surveillance footage, and prior complaints may help establish what was known and when. The condition itself matters, but the timeline surrounding that condition can be equally important when determining whether negligence occurred.

Document the Condition Before It Changes

Many accident scenes don't remain unchanged for very long. A spill can be mopped up. Debris can be removed. A broken step can be repaired. A loose mat can be repositioned. Once that happens, it may become much harder to show exactly what the person encountered.

Photographs can preserve the scene. When possible, images showing both the specific hazard and the surrounding area can provide useful context. Witnesses may also matter. Someone nearby could have seen the fall, noticed the condition beforehand, or heard an employee discussing the problem.

Surveillance footage can be particularly valuable because it may show not only the fall but how long the hazard existed beforehand. Mission Personal Injury Lawyers notes that gathering evidence, interviewing witnesses, and reviewing safety information can be important parts of investigating these claims.

An incident report can create another contemporaneous record. The basic idea is simple: document the scene while it still looks like it did when the accident happened.

Injuries May Become Clearer After the Initial Shock

The first reaction after falling is often embarrassment or surprise. Someone may stand up quickly and assume they're fine. But the seriousness of an injury isn't always immediately obvious.

Falls can cause fractures, head and neck injuries, back injuries, concussions, soft-tissue injuries, and injuries involving the knees, hips, shoulders, or wrists. More severe falls can result in spinal cord or brain injuries.

Symptoms can also evolve after the initial event. Pain, swelling, stiffness, dizziness, headaches, or limited movement may become more noticeable after the immediate stress of the fall has passed. Appropriate medical evaluation can help identify injuries and determine what treatment is necessary.

Medical documentation may later become important if there is a dispute about what injuries resulted from the accident. Prior medical conditions and other possible causes may also need to be considered. The fact that someone was able to stand up afterward doesn't necessarily reveal the complete medical picture.

Conclusion

The fall itself may last only a moment. Figuring out why it happened can take considerably longer. A meaningful investigation looks beyond the fact that someone ended up on the ground.

What condition caused the fall? How long had it existed? Did the property owner or employees know about it, or should it reasonably have been discovered? Were there warnings? What evidence remains?

Those questions can become just as important as documenting the injury. Photographs, surveillance footage, witnesses, incident reports, maintenance information, and medical records can help reconstruct what happened after the physical scene has already changed.

That's why the minutes immediately following a fall can matter. The injury needs appropriate attention, but the condition that caused it may also need to be preserved before someone cleans, repairs, moves, or removes it. Once the hazard disappears, answering the questions surrounding the fall can become much harder.

THE ART OF THE SNACK | MAI RESTAURANT + BAR

This month, our The Art of the Snack takes us to Thailand at Meliá Chiang Mai’s - Mai Restaurant & Bar. We took some time to sit down with Executive Chef Suksant Chutinthratip (Billy) to find out more about this restaurant, Chef Billy’s background, the ambiance of this eatery, and what we should order when we’re at our next visit there!

ATHLEISURE MAG: Before we delve into

Mai Restaurant & Bar, can you tell us a bit

about the neighborhood and the Meliá Hotel

in Chiang Mai that this restaurant is in?

CHEF SUKSANT CHUINTHRATIP BILLY: Chiang Mai is one of Southeast Asia’s most exciting culinary destinations because it brings together nature, agriculture, and centuries of food culture. Surrounded by mountains and forests, the region produces exceptional seasonal vegetables, herbs, fruits, Arabica coffee, and tea. It is also home to rich Lanna culinary traditions and many ethnic communities whose recipes have been passed down through generations.

Today, Chiang Mai has become a vibrant food city where traditional street food, family-run restaurants, and Michelin-recognized dining exist alongside innovative chef-driven concepts that celebrate local ingredients.

Soaring over the Ping River and bustling Night Bazaar, our hotel is situated on the lively Charoen Prathet Road, Meliá Chiang Mai is located six kilometers from the Chiang Mai International Airport, near an array of tourist attractions. These include the Old Town with its ancient most and red-brick walls, the city’s oldest temple Wat Chiang Man, and the scenic Ang Kaew Reservoir. The elephant rescue center Elephant Nature Park, the stunning Mae Ya Waterfall, and UNESCO’s latest biosphere reserve Doi Chiang Dao are also within close proximity.

With a design that pays homage to contemporary aesthetics and Chiang Mai’s charming history and culture, Meliá Chiang Mai is housed in a 22-floor tower fronted by an adjoining seven-floor podium building. Our hotel’s dining landscape features restaurants Mai Restaurant and Bar and Laan Na Kitchen, bars MAI The Sky Bar and Tien Pool Bar, and lounges Ruen Kaew and The Level Lounge; the latter a 21st-floor executive lounge with panoramic views of the city. Other top-notch facilities include Meliá’s signature YHI Spa with seven treatment rooms, a fully equipped fitness center, picture-perfect swimming pool, ballroom, four other meeting spaces, and a kids and teens club.

Mai Restaurant & Bar is located on our 21st floor, offering guests panoramic views of the city and surrounding mountains, including famed Doi Suthep Temple on the mountaintop to the west. It’s a wonderful setting where visitors can experience contemporary Thai cuisine inspired by Northern Thailand while enjoying the comfort and hospitality of an international luxury hotel.

AM: What can you tell us about the ambiance and aesthetic of Mai Restaurant & Bar that guests can expect when they come in to dine?

CHEF SCB: Mai Restaurant & Bar was designed to offer a modern fine dining experience that feels elegant yet approachable. The restaurant combines contemporary architecture with subtle Thai influences, creating a warm, intimate atmosphere rather than a formal one.

Being located on the 21st floor gives our guests spectacular panoramic views, especially during sunset and in the evening when Chiang Mai begins to light up. Every detail from the lighting and interiors to the personalized service is intended to create a memorable dining experience.

Adjacent to the hotel’s executive lounge, and tucked under the highest rooftop bar in the city, the 38-seat Mai Restaurant & Bar is a visual marvel. Diners enter the venue under an arch that pays homage to a nearby temple. In a salute to Chiang Mai’s Bo Sang Umbrella Village, large lit installations of umbrella ribs cling to the ceiling. Various artworks of umbrella canopies hang on the walls, such as those made from antique Chiang Mai textiles. The carpet’s concentric patterns, in the likes of gun-metal gray, periwinkle and soft amber hues, reference umbrella tops in a striking yet subdued way.

AM: Tell us about yourself as a chef as well as where you trained and kitchens you worked in prior to coming to Mai Restaurant & Bar.

CHEF SCB: I’ve been fortunate to build my career across several leading hotels and restaurants throughout Asia and Oceania. Before joining Meliá Chiang Mai, I served as Executive Chef at Hotel Nikko Bangkok, Rayong Marriott Resort & Spa, and Courtyard by Marriott Bangkok. Earlier in my career, I also worked with The Peninsula Bangkok, Raffles Hotel Singapore, SKYCITY Auckland in New Zealand, and Lotus One Restaurant in Dubai.

I’ve had the privilege of representing Thai cuisine through food festivals and culinary exchange programs in countries including Spain, Italy, Norway, China, Vietnam, Hong Kong, and the Dominican Republic. These experiences have broadened my perspective while reinforcing the importance of preserving authentic Thai flavors.

I’m especially passionate about sustainability and supporting local communities. Earlier this year, I was honored to receive the Green People Award 2026 for my work with the Chiang Mai Green Kitchen initiative, promoting seasonal ingredients, supporting local farmers, and mentoring the next generation of chefs. Earlier in my career, I also received a Gold Medal at the Norge Mystery Net Seafood Contest organized by the Royal Norwegian Embassy in Bangkok.

AM: What is the cuisine that is found on this menu and what are the ingredients and spices that are associated with this cuisine?

CHEF SCB: Our cuisine is contemporary Thai, inspired by traditional recipes while embracing modern cooking techniques and presentation. We focus on highlighting Thailand’s incredible regional ingredients, especially those sourced from Northern Thailand.

Guests will find familiar Thai flavors created with fresh herbs and spices such as galangal, lemongrass, kaffir lime, turmeric, coriander, Thai basil, mountain chilies, and aromatic curry pastes.

Sustainability is at the heart of our philosophy, so we work closely with local farmers, artisans, and producers to ensure every ingredient is fresh, seasonal, and responsibly sourced to make the overall food system more resilient. Our ‘360° Cuisine’ program promotes healthy and sustainable eating based on ‘farm to plate’ and ‘plate to farm’ processes. Each dish from our restaurant’s seasonal menu is prepared à la minute from an open kitchen. Every dish reflects the people, ingredients, and traditions of Northern Thailand while presenting them through a contemporary lens.

Our ‘farm to plate’ efforts, sourcing organic produce that travels only a short distance to our hotel and using every part of each ingredient we can – roots, leaves, stems, stalks and more – come full circle with ‘plate to farm’ whereby we return food waste back to the farm as fertilizer in a truly 360° concept. Leftover cooking oil is sent to be recycled into biodiesel. The 360° Cuisine program is also designed to give guests peace of mind about where their food comes from.

AM: What are three appetizers that we should consider when coming in with friends and family?

CHEF SCB: I would recommend beginning with these three dishes:

Mai’s Samplers – A collection of our signature bites including glutinous rice cake with caramelized turnip, citrus tuna roll, shrimp in egg net, rice cracker with spicy tomato relish, and blacktail chicken sausage.

Hoi Shell Samunprai – Hot seared deep sea scallops served with aromatic herbs, dried chili drops, and crispy turmeric chips.

Yum Puu Nim – Soft-shell crab and pomelo salad with paddy field crab jus, wing beans, and toasted sesame.

AM: What are three soups that you suggest?

CHEF SCB: Gaeng Sor Me Phak Waan Baan – A delicate consommé with dried redtail catfish, seasonal mushrooms, and locally sourced greens.

Tom Saap Karieng – A vibrant hot and sour soup with mountain chili paste, baby pork ribs, and young tamarind leaves.

Tom Kha Gai – Coconut cream soup infused with galangal, chicken, wild chili paste, and fresh young coconut.

AM: For rice and noodle dishes, what are three that you suggest?

CHEF SCB: Khao Buri Gae – Cigarette-style biryani rice with safflower, lamb, and mint yogurt.

Kua Mee Moo – Fermented noodles wrapped in lotus leaf with pork neck, dark soy, and pickled cabbage.

Kanom Jeen Nam Prik Goong Pao – Fermented rice noodles with seared tiger prawns, aromatic curry sauce, and fresh garden herbs.

AM: When we think about a main course, what are three that we should have in mind?

SCB: Salmon Nam Prik Oung – Baked salmon with Northern Thai Nam Prik Oung relish and fragrant pandan rice.

Kaeng Hang Le Kra Dook Moo – Hang Le-style pork rib curry served with poached pear and pickled vegetables.

Kua Haam Gai Benja – Slow-cooked chicken roulade stuffed with Sai Oua sausage and finished with lemongrass foam.

AM: To end the meal, what are three desserts or fruits that we should be thinking about?

CHEF SCB: Lum Yai Pudding – Organic longan pudding with butterscotch sauce and coconut ice cream.

Kanom Thai Set – A treasure box of miniature Thai desserts including Luk Chub flowers, sweet Khao Soi, and Thai tea mousse.

Khao Niew Turian – Sticky rice with premium durian.

AM: What are three cocktails that we should think about pairing with our meal?

CHEF SCB: Bosque – Whisky, cinnamon, cranberry juice, lime, honey, and pasteurized egg white.

Jao Phraya – Phraya rum, fresh ginger juice, lime juice, and honey.

El Agave – Tequila, triple sec, pineapple juice, aloe vera juice, lime juice, and agave syrup.

AM: Tell us about Chiang Mai Green Kitchen farmers and why this relationship is so important to Mai Restaurant & Bar.

CHEF SCB: Through the Chiang Mai Green Kitchen initiative, we work closely with ethical farmers and producers who grow chemical-free, seasonal ingredients. It’s no easy feat to operate a chemical-free farm and it’s more expensive to support sustainable agriculture. Yet we believe it’s crucial to engage directly with local farmers, producers, professors and health sector professionals to create a unique connection within the community that ultimately benefits the health of our guests, our community and our environment.

One of our valued partners is Rong Khum Farm, founded by Chiang Mai University Professor Dr. Puangrat Kaewlom, whose research focuses on sustainable agriculture. Such partnerships allow us to serve fresher ingredients while helping strengthen local farming communities and encouraging environmentally responsible food production.

When guests dine with us, they’re also supporting the people who grow the ingredients behind every dish.

Also, in addition to working with farmers, we also work with universities to educate and train upcoming generations of hospitality professionals about sustainable farming, culinary and waste management practices. Culinary students from Suan Dusit University in Lampang, Chiang Mai University and Rajamangala University of Technology Lanna Tak study, and experience in action our ‘360º Cuisine’ concept. We have also hired some of the students upon graduation who share our passion for sustainability.

AM: Are there any upcoming events that you would like to share that we should know about?

CHEF SCB: I’m honored to serve as Event Coordinator for the upcoming Chiang Mai Chefs Charity: Chef to Farm, taking place on 8 August 2026. The event brings together chefs, local communities, farmers, and food lovers to celebrate sustainable agriculture while raising funds for elderly local farmers who are bedridden and in need of support. Participation begins at THB 599 per person, and every contribution support elderly local farmers who are bedridden and in need of assistance. It’s a meaningful way for our culinary community to show gratitude to the people whose hard work makes our profession possible.

Guests can sink into stylish seating nooks surrounded by richly layered décor, featuring designer chairs and sofas imported from Europe, rattan pendant lighting, and sculptural chandeliers. Artwork sourced through local NYC artisans adds character and authenticity to the space. Sourcing from primarily New York, California, and Oregon vineyards, Mark curated a climate conscious wine list, spotlighting organic farms, sustainable producers, and regenerative methods. A few notable selections include Hermann J Wiemer, an off-dry Riesling farmed at biodynamic estate vineyards along Seneca Lake; Noblesse Oblige from Wölffer Vineyards in Sagaponack, Long Island; and Lingua Franca Avni, all the way from Oregon’s cool Eola-Amity Hills in Willamette Valley.

Golfers have access to more instructional information than ever before. Swing tutorials, practice drills, launch-monitor data, video analysis, and coaching advice are available almost instantly. Yet having more information does not necessarily make improvement easier.

For many golfers, the real challenge is knowing what to work on, why it matters, and how to turn practice into results on the course.

That is where smarter, more structured training can make a difference. Instead of simply hitting more balls or constantly searching for a new swing tip, golfers can benefit from identifying specific weaknesses, using targeted drills, reviewing feedback, and measuring whether those changes actually improve performance.

THE TEXT MESSAGE THAT CAN WAIT BUT SOMEHOW DOESN'T

The phone buzzes while you're driving, and suddenly there's a tiny mystery sitting beside you. Who sent the message? Is it important? Maybe you'll just glance down long enough to see the name. It feels harmless because checking a text takes far less time than actually answering one.

But the road doesn't pause while you're looking at the screen. Traffic ahead can slow, a car can enter from a side street, or someone can step into a crosswalk. By the time your eyes return to the windshield, the situation you were watching a moment earlier may already be completely different.

That's what makes texting and driving such a dangerous combination. The distraction may last only a few seconds, but those seconds happen while the vehicle continues moving and the driver temporarily stops seeing the full picture.

One Text Can Steal More Than Your Eyes

Reading a message obviously requires looking away from traffic, but that's only one part of the distraction. Holding a phone, tapping the screen, or typing a response can also take a hand away from the steering wheel when it may suddenly be needed.

Then there's the mental side. A surprising message can keep someone's attention long after the phone goes back down. Maybe it's an argument, a work problem, or something exciting. The defense strategy against an OWI charge might include checking the reason the stop was performed, the administration of the field sobriety tests, the administration and results of the breath or blood alcohol tests, the conduct of law enforcement in the course of the arrest, and whether the evidence was properly obtained.

Some states have different rules and regulations when it comes to operating a motor vehicle while under the influence of a certain level of alcohol, which may result in criminal prosecution. What Counts as Intoxicated Varies More Than People Expect

It is presumed that a DUI/DWI charge necessarily entails a blood alcohol test that registers 0.08 percent or more, which is not entirely accurate in the majority of states. 

In the state of Michigan, the Driving While Intoxicated statute is prosecuted either through proof that the defendant had an elevated BAC or that the defendant was driving while being under the influence of alcohol, affecting his/her ability to operate a motor vehicle.

Texas uses a similar two-pronged approach in its DWI statute. One may be charged either for operating a vehicle with a BAC of 0.08 percent or more or for losing their ability to operate a car normally following the use of alcohol and other drugs. This means that the prosecution doesn't have to present any results of a chemical test. 

The observation by the police officer and the field sobriety test results, together with the statements of the defendant himself about what he or she had been drinking, may serve as the sufficient evidence in such a case. 

This distinction is important to understand since it affects the way in which one should defend oneself.

How the Process Unfolds After an Arrest

The process that follows a DUI or OWI arrest tends to move through the same basic stages regardless of state, even though the names and timing of each step vary somewhat by jurisdiction.

Booking comes first. At the police station, officers take the driver's personal information, fingerprints, and photograph and process the arrest. This is administrative, not a court proceeding.

Following the arrest, the arraignment typically occurs within a day or two. This is a court hearing at which the suspect or defendant appears before a judge. The defendant is advised of the charges he or she is facing and will make a statement of their appeal before the court. Afterwards, the defense starts preparing its arguments and analyzing all the evidence that the prosecution provides. How the traffic stop was justified, the results of the sobriety tests, how the chemical test was administered, whether the equipment used to administer the chemical tests was functioning properly, and whether the analysis of the results followed the accepted procedures. Each and every step along the way will be challenged.

Separately, implied consent laws run on their own clock, entirely apart from the criminal case's timeline. A driver can win the DUI case in court and still lose their license under implied consent, or vice versa.

Based on the legal system of Michigan, deliberately declining to undergo a chemical test after being arrested has the potential to allow the revocation of one’s driver’s license. Such requirements are not applicable to the voluntary preliminary breath test available before arrest. If there is a refusal, the police are permitted to compel a traffic arrestee to have blood drawn for analysis by obtaining a warrant.

Texas works on a similar principle but with different numbers. Under the state's implied consent provisions in the Transportation Code, refusing testing after arrest leads to an automatic 180-day license suspension for a first offense, regardless of how the underlying case resolves.

Where the Real Defense Work Happens

Since the process is such an important element, most of the defense work will revolve around the question of precisely how the process was done rather than contesting any of the basic facts involved. 

An example of such a question could be whether the stop was fair in the first place or the procedure followed in the field sobriety tests. Whether the devices used were well checked and serviced as they should be will also be scrutinized. The defense will also check if the person performing the stop had proper authorization according to the law.

In states similar to Texas, which do not have chemical evidence as a basis of the law, defense is more often based on whether the prosecution can prove that the driver was drunk by observation.

Why First-Time Offenders Often Underestimate These Cases

Most people who find themselves in their first OWI or DWI case tend to believe that their case will be easy and will have a predictable result, but the reality is not usually the case. 

There are often opportunities for negotiation, diversion, and attacking the prosecution's evidence in many first-time OWI or DWI cases, especially when proper procedure was not followed.
