THE ART OF THE SNACK | MISHIK

In month's The Art of the Snack we make our way to Hudson Square in Lower Manhattan where the West Village, SoHo, and Tribeca surround it! We find out more about Mishik's Modern Japanese and Edomae-style sushi omakase, their dishes, and what one can expect when enterting this culinary destination! We sat down with David Kim, Owner of Mishik as well as their Executive Chef/Partner Markee Manaloto to find out more.

ATHLEISURE MAG: What is the meaning behind the name, Mishik?

DAVID KIM: Mishik can encompass various meanings in Korean depending on context, but it generally translates as “beautiful food” or “delicacies.” While fine dining may be associated with formality and high cost, it doesn’t have to be. My aim is to provide guests with the opportunity to savor high-quality cuisine at an accessible price point, within a setting that strikes a balance between informal and formal. What we want to provide for our guests is exquisite food prepared with highest quality ingredients and classic techniques that date back to the Edo period in Japan such as aging of fish combined with our omakase counter experience that doesn't involve complete silence or an overly stuffy environment.

AM: Located in Hudson Square, when did this restaurant launch and why did you want to be in this neighborhood?

DK: Our grand opening was in January 2024. Hudson Square, sitting between the busy Soho and Tribeca neighborhoods, is an up-and-coming area with lots of new developments. I want Mishik to be one of Hudson Square’s top go-to restaurants.

AM: Tell us about Studio Rolling as we love how they create interiors for restaurants as we enjoyed their work in Hortus NYC during Food Network's NYC Food Wine Festival. What was the design approach to Mishik and can you walk us through what guests can expect in terms of its ambiance or where they can sit either at the sushi counter, the dining room, or at the 13-seat bar?

DK: The space was a bit tricky to work with as it was a former burger joint, so we started redesigning from the ground up. I wanted to offer our guests a unique sushi counter experience for omakase as well as an exceptional bar featuring great cocktails and unique wines and sakes. The final design that Youngmi from Studio Rolling and I came up with struck a balance between relaxed and trendy, intimate and aesthetically pleasing. We aim to be a great addition to this beautiful neighborhood.

AM: Our readers have heard us share a number of restaurants that utilize omakase, but what is Edomae-style sushi omakase?

EXECUTIVE CHEF MARKEE MANALOTO: Edo was the old name for Tokyo during a time of great change in Japan from the 17th to 19th centuries. Edomae-style sushi was born during this time, and the techniques have been passed down through the generations. It involves butchering fish humanely, the ikejime way, scaling it precisely with a knife to not damage the meat, the sukibiki way, aging or curing the fish and then serving it over rice seasoned with vinegar.

AM: As Executive Chef/Partner Markee Manaloto, can you tell us about where you trained and kitchens you worked in prior to being involved at Mishik as we know that you were an Omakase Chef at both Michelin - starred Sushi Yasuda and Kissaki.

EXECUTIVE CHEF MM: Prior to Mishik I was the chef partner at Gugu Room, a Japanese-Filipino izakaya restaurant in New York City. Before that I was an omakase chef at Michelin-starred Sushi Yasuda and Kissaki Omakase. I started my career in Michigan, working under chefs who defined the traditional sushi scene in the Midwest. My last mentor there before moving to New York was Chef Lloyd Roberts, who went on to open Nobu 57 and was one of Nobu Matsuhisa’s first executives to travel the world.

AM: Why did you want to be involved in Mishik?

EXECUTIVE CHEF MM: David and I both wanted to shakeup the omakase game in New York City by adding a more robust tasting menu and a la carte options. It feels like there are hundreds of omakase bars in the city that just do counter service, but having a kitchen to also produce plated dishes, flavorful sauces and detailed garnishes is where we really get to showcase our creativity. Joining Mishik has also allowed me to introduce dry-aged fish to customers, an under-used technique that really brings out the flavor and texture of fish. Being able to offer the purist form of sushi alongside progressive dishes and techniques is like having the best of both worlds.

AM: Guests who come to Mishik have the option for Edomae-style sushi omakase, chef's tasting, and a la carte options. Why was this approach that you wanted to make available in terms of the menu?

EXECUTIVE CHEF MM: We visualized Mishik as modern, all-around Japanese dining experience, which includes an omakase counter but also features a dining room with a la carte and tasting menu options. This gives me an opportunity to rotate the menu with new dishes and highlight seasonal ingredients. Plus, blending traditional Japanese ingredients with modern techniques is really exciting and offers something new to customers.

AM: Tell us about your 2 omakase options and walk us through this particular portion of the menu.

EXECUTIVE CHEF MM: We have two omakase options, 12 or 16 pieces of nigiri with a traditional handroll, soup and dessert to finish. These two options are only available at the omakase counter. It gives me an opportunity to explain to guests how we dry-age all the fish in-house to enhance the texture and flavor of each bite. This process of meticulously cleaning and then hang-drying the fish in-house really makes a difference in the final product.

AM: Tell us about the Chef's Tasting Menu which is a 7-course meal.

EXECUTIVE CHEF MM: The seven-course tasting menu highlights the best of Japanese cuisine and goes beyond sushi. It starts with Scallop Sashimi with Asian pear, crispy shitake mushrooms and truffle ponzu, followed by a Donburi rice bowl with tuna tartar and jidori egg yolk, then Yakizakana fish of the day with broccolini, yuzu hollandaise and shishito kosho (we use dry-aged fish in this dish as well); six pieces of Nigiri Sushi highlighting seasonal fish and seafood from Japan such as goldeneye snapper (kinmedai), black throat sea perch (nodoguro), rockfish (kinki), tuna, and uni. Then Yakiniku 6-hour koji-marinated steak with black truffle emulsion and choux farci; Dashi white miso and fish-bone based broth, and dessert that includes the prized Japanese crown melon. The tasting menu is the best way to experience Mishik. The fish changes based on season and what’s fresh from the market, which is another reason why I recommend the tasting menu, since it means guests get to try something different every time.

AM: For the a la carte menu, what are 3 dishes that you suggest that we should have our eye on when we come in to dine?

EXECUTIVE CHEF MM: The a la carte menu offers modern Japanese dining experience: dry-aged fish like Nodoguro (black throat sea perch) with tomato dashi cream and braised king trumpet mushrooms; King Crab Legs with ginger aioli; A5 Wagyu beef; and a stunning Kegani Donabe for Two, an elegant rice pot with Hokkaido hairy crab, uni, ikura, scallops, lotus root, maitake mushrooms, and edamame that can be shared by the table.

AM: For those who are interested in a salad or a rice bowl, what are 3 that we should have our eye on for our next visit?

EXECUTIVE CHEF MM: The rice bowls really allow us to explore different techniques and culinary influences. The Uni Bibimbap with nori puree and the A5 Wagyu Kimchi Fried Rice are exciting marriage of Japanese and Korean cuisine. If you want to go all out with a rice bowl, then try the Kegani Donabe for Two, a showstopping rice pot loaded with seafood, mushrooms and more delicious flavors that makes for a great date night dinner.

AM: What are 3 pieces of sushi that you suggest?

EXECUTIVE CHEF MM: Our nigiri sushi changes seasonally but if you see goldeneye snapper (kinmedai), black throat sea perch (nodoguro) or rockfish (kinki) on the menu, they are fantastic and not as common as tuna or uni (though they are delicious too). We also offer a selection of temaki (hand rolls) and makimono (sushi rolls).

AM: For sides, what are 3 that would be great to enjoy with our meal?

EXECUTIVE CHEF MM: Ankimo (monkfish liver) is considered a delicacy — it’s like the foie gras of the sea. We serve it fried in tempura batter, and it makes an excellent accompaniment to anyone’s meal. If guests are looking for something lighter, then I’d suggest the refreshing hiyashi wakame seaweed salad. A la carte sushi and sashimi options also make for great sides if guests just want an extra bite or two at the end of their meal.

AM: We love a great beverage program, we'd love to know what are 3 signature cocktails that we should have in mind when dining with friends and family?

DK: I feel like the cocktail scene has dramatically changed in the past few years, where in the past drinks were usually simple with just three elements: your spirit, a balancing agent, and a modifier. Nowadays, there is so much more technique and creation involved. The classics will always remain, but we have a great cocktail program that we created with some very talented people. I would personally recommend the Genmai Espresso Martini, Bergamot Tea, Kuri Tai, and the Shiso. I know you said three, but we have so many good cocktails!

AM: What are 3 sake's that we should consider?

DK: This is a tricky question. Everyone's palate is different, and just like someone might prefer a pinot noir over a cabernet, sake is the same. My personal favorites at the moment are Dewazakura Yukimanman, which is a sake that has been aged for five years; Hakkaisan Yukimuro Snow, aged three years; and I usually don't gear towards fruit flavored sake but we have a beautiful Yuzu Sake by Masumi. 

AM: We love a great beverage program and we know that you consulted with sommelier Doreen Winkler, what are 3 wines that would be great to pair with our meal?

DK: Doreen has been really great for us. She is well versed in different wines, especially skin contact wines.  We offer a variety of wines but right now my personal favorites would be the Grape Republic "Anfora," a fantastic red wine from Yamagata in Japan, as well as Karine Lauverjat Pouilly Fume and Patrick Piuze "Terroir" Chablis.

AM: For those who enjoy a great beer, what are 3 that you suggest?

DK: Orion pairs really well with any Japanese cuisine.  We also have a Kyoto Matcha IPA, and for the ale lovers I'd recommend Lucky Cat White Ale. Both are from Kizakura Brewery.

AM: Are there any upcoming events that we should know about that Mishik will be involved in?

DK: We will be participating in the upcoming Joy of Sake event in NYC on Aprill 11!

JOY OF SAKE

The Joy of Sake is a fantastic event that celebrates sake and allows guests to enjoy a wide array as well as to enjoy pairings from restaurants! We wanted to take some time to find out more about this event that takes place here in NY as well as in Hawaii! Next month, The Joy of Sake will take place on April 11th at the Metropolitan Pavilion from 6:30pm - 9:30pm. What a way to enjoy this beverage as well as to get excited about trying new ones that you have yet to enjoy!

We wanted to catch up with the founder and organizer of The Joy of Sake, Chris Pearce to tell us more about sake, what takes place at the event, and what we should expect when we attend!

ATHLEISURE MAG: Much like wine has different varietals, is this the same for sake and if so, can you tell us about this? We know that sake is produced in Japan, what makes this region so equipped to make sake?

CHRIS PEARCE: People around the world always seem to find something in their region to make alcohol from. Ancient Japan didn’t have any cultivated grapes, but they did have plenty of rice to turn into sake. Over the centuries, sake-making know-how gradually developed to make the great sakes we enjoy today. While wines are divided into red, white and sparkling, sake’s major classifications are junmai, ginjo and daiginjo. Sake is made with rice, water, koji and yeast. In general, junmai sake is made with rice grains that have been polished to remove 30-40% of the outer grain; ginjo 40% or more, and daiginjo, considered the most premium sake, is made with 50% or more of the rice grain polished away. Japan is smaller than California, and the number of sake-brewing rice varieties is just a fraction of the number of grape varieties. This may explain why in traditional Japanese sake terminology, there is no word corresponding to "varietal."

AM: Are there other regions in the world that also make sake?

CP: Accurate figures are hard to come by, but it’s likely that at least 20% of the sake consumed in the U.S. is made here. Big Japanese breweries have been making sake in California since the 1970s, and now a growing number of smaller breweries are producing it in their respective states, including upstate New York.

AM: Tell us what led you to sake and what your background is?

CP: I live in Hawaii, where sake is part of the state’s heritage due to the large number of Japanese immigrants. After moving here from Okinawa, Japan in 1978, I started drinking Takara Masamune sake from a local Honolulu brewery that was founded in 1908. I got to know the brewmaster and drank with him regularly over the years. As my knowledge of sake grew, so did my appreciation. To celebrate the art and culture behind sake, we put on the first Joy of Sake tasting in Honolulu in 2001 and then came to NYC in 2004.

AM: How did your love for sake create the need to launch The Joy of Sake and why did you feel the need to create this event that takes place in Honolulu and in NY?

CP: Around the year 2000, more premium ginjo and daiginjo sakes started coming into the U.S., but not much of it was shipped refrigerated or kept cold upon arrival, which impacted the end quality. In addition, sake knowledge wasn’t as widespread as it is today, and most people had no idea what a good sake was supposed to taste like. The Kokusai Sake Kai (International Sake Association), which was founded in Honolulu in 1987, thought this was a shame and decided to host a professional tasting with judges from Japan and under the guidance of the Japan National Research of Brewing, which has been conducting a national judging (or appraisal) since 1910. The first U.S. National Appraisal was held in Honolulu in 2001. The entries were then presented to the public at a tasting event that we called “The Joy of Sake.” The name was inspired by the 1970s best-seller about another enjoyable pastime.

AM: Why are Honolulu and NYC the 2 cities that host this event each year?

CP: Joy of Sake events have also been held in San Francisco, Las Vegas, Tokyo and London over the years, but Honolulu and New York are the oldest. This coming Joy of Sake in NYC marks 20 years since the first New York event in 2004.

AM: Are the events the same? We are looking forward to your NY event on April 11th! How many sake vendors will participate and what is the process for them to be included in this event?

CP: The Honolulu and New York events are quite similar. Guests can sample sakes that have been submitted as entries to the U.S. National Sake Appraisal at the walkaround Joy of Sake events. This year there are 578 labels, many not available in the U.S. In addition to these sakes, there are 10 tables where guests can sample sakes from different importers and distributors.

AM: We hear that there will be more sake participants this year, are there any brands that we should keep an eye out for as we think about who we will be sampling? Can you share some of the restaurants that will be participating this year?

CP: This year 198 breweries have sakes at the event. It’s hard to single out one brand because there are a lot of good ones. At the event guests will know which sakes received gold awards at the competitive appraisal, so that is a good indication that they are expectational.

Sixteen restaurants will be at the NYC event serving original sake-inspired appetizers, including annual supporters such as Bond St, Sakagura, Gugu Room, Rule of Thirds, Cha An, Sen Sakana, Taru, Juban, Towa and Zuma, along with new participants such as ILIS, Mishik and Sake No Hana.

AM: This is quite an event. What can guests expect when they attend next month?

CP: Guests can expect to have a fantastic time. Walking around while sipping a wide range of sakes at your leisure, trying one of the tasty appetizers from a top NYC restaurant, enjoying the atmosphere with friends — it all makes for a very special ambiance. I don’t think there’s anything quite like it.

AM: There is also a philanthropic element to this event, can you tell us more about that?

CP: The Joy of Sake is 501(c)(3) non-profit organization whose mission is sake education. We sent donations to brewery employees who lost their homes in the Fukushima earthquake and tsunami and contributed Y1,000,000 to breweries that were damaged or destroyed in the Ishikawa earthquake. In addition, we often assist other non-profit organizations with their fund-raising efforts.

AM: When you are not focused on the events in Honolulu and NYC, what does the Joy of Sake do throughout the year?

CP: We hold smaller “Aftertaste” events focused on specific themes, such as a particular brewing region of Japan or on an aspect of sake appreciate like umami in sake, acidity versus sweetness and other characteristics that impact the flavor. These events generally feature around 50 sakes, in line with our firmly held belief that the best way to learn about sake is to drink some.

When only one person is able to initiate the program and he is kidnapped, the need to rescue him is essential! Morgan knows he must focus on finding him and also stopping the president from pushing forward with his plans.

HOMAGE TO CRAFTSMANSHIP | CHEF JACQUELINE BLANCHARD

We love our meals to be fully seasoned. How we prepare them, the diversity of our ingredients (as well as knowing where they come from), the proper tools needed to create the ultimate presentation are super important. We caught up with Chef Jacqueline Blanchard, chef/owner of Sukeban an izakaya in New Orleans as well as at Coutelier NOLA which has an array of tools, cookbooks, and pantry goods that professional chefs, home chefs, and enthusiasts can enjoy when making their epic meals.

We wanted to know more about her culinary journey that took her from Southern Louisiana to noted Michelin starred restaurants including The French Laundry, Benu, and Blue Hill at Stone Barns where she continued to create dishes with a discerning eye. When she returned to her home state, this led to her taking her experience and relationships to illustrate her passion for Japanese cuisine and to showcase the ultimate crafstmanship in Japanese cutlery. We found out more about these businesses, why this Japanese artistry is one that needs to be continued to pass down for generations to come, and more.

ATHLEISURE MAG: When did you fall in love with food?

CHEF JACQUELINE BLANCHARD: At a very young age. I’m from a very big Cajun family. Food is just the center of most gatherings – pretty much all gatherings from the South. I’m from South Louisiana from Bayou Lafourche – I have very deep Cajun roots. My family has been down here since the late 1700’s, so big French background. Whether it’s been crawfish boils or food in general, food has always been a centerpiece. So for me, I’ve always been cooking at a very young age, My grandparents had a small outdoor kitchen and we would always make breakfast in there. It’s probably my earliest memories. Back in the day, those houses didn’t have a lot of air conditioning so they put small kitchens outside so it was a matter of keeping houses cool and that sort of thing.

I definitely got my roots from tugging at my grandmother's aprons - gumbo, all of the Southern staples and that just kind of stuck with me my whole life. I kind of knew pretty early that I wanted to pursue cooking professionally at a pretty young age. It's kinf of been with me the whole time!

AM: Wow! Tell us about your culinary journey from culinary school to kitchens that you trained in. I know that you were at The French Laundry and were at one of our favorite places, Blue Hill at Stone Barns which is such a fave!

CHEF JB: Yeah! That’s awesome! Totally!

I was lucky enough to go to Chef John Folse Culinary Institute at Nicholls State University which has an amazing culinary school. I think that it’s still the only state school in the country that you can get a 4 year culinary degree in Bachelors Arts that is not a private university. It’s very rare that that exists. I had applied and gotten into all the fancy culinary schools: CIA, Johnson & Wales, and all of that. But when it came down to it, Louisiana would pay for my tuition if I kept my grades at a certain level – they had this program called the TOPS (Taylor Opportunity Program or Students) program, and plus I had a soccer scholarship as well. So it made sense for me to stay in state. So I was pursuing culinary arts at the same time that I was pursuing soccer at the collegiate level. I kind of kept my discipline together for sure and then I blew my knee out my sophomore year and then decided to just focus on culinary. During that period of time, I felt that it was a pretty revolutionary time in the food industry and in restaurants where things were really starting to get out there and to take hold. This was like the early 2000’s. I went to culinary school between 2002 – 2006 and then frickin’ Katrina happened my senior year in college in 2005. So by the time that I graduated, I had been working in restaurants all throughout New Orleans in college and the city was just in really bad shape in the months leading after the storms so I felt that it was a really good time for me to sort of leave and to branch out.

The French Laundry cookbook had just come out while I was in college and that was a big source of inspiration for me. I think that the reason that I decided to go to Yountville – I just graduated and got in my car and went to California. I never thought that I would come back to Louisiana - ever. I had an amazing foundation built there, networks out there, it was a great launchpad for the next phase ofmy career. From there, I went to Frasca in Boulder, I was a French Laundry alumni and the restaurant had just opened. It was definitely an amazing experience and Bobby Stuckey (The Little Nell, The French Laundry, Scarpetta Wine) is a master sommelier and I really wanted to know more about wine in the same thread in learning about food. Then I went to Blue Hill and then it was back to New Orleans around I think 2010. I worked with John Besh (Besh Steak, Shaya, Willa Jean) at Restaurant August, I was the Exec Sous there for several years. Then I took on a position as a sous chef at Benu in San Francisco where we got 3 Michelin stars while I was there which was a really exciting time. I was also kind of burned out at that point!

AM: Can definitely imagine as you were moving to so many places!

CHEF JB: Yeah, I was traveling a lot and I was around 30/31 at that time and decided that I would move back home so that I could open Coutelier NOLA which is the knife shop and it gave me kind of a break from the grueling kitchens that I had been in all of those years. I still had my finger on the pulse of what the industry needed and places around that had all of these amazing tools and accessories that we had only been able to access online and you never know what you’re really getting a lot of times. Those were the earlier days of ecommerce. I wanted something kind of tangible where you could go and hold a knife. I had been exposed to these amazing Japanese knife makers throughout my career and with people that I worked with and that was great exposure. So it made me understand why Japanese knives are something that we prefer and it’s the Japanese craftsmanship. It’s the handmade nature of them, it’s the diligence to craft that the Japanese have that is basically unparalleled – whether it’s flower arranging, sushi, ceramics, whether it’s knife making. Everything that they do is with the utmost focus and diligence. It really makes their product stand out. So, I think that that was something I really liked and the relationships for me were important and diving as deep as I could into Japanese culture and really respecting the culture and just absolutely giving in the attention to detail that it deserved as well as the reverence. It's such a deep ocean of history! It’s hard for a foreigner – even as deep as I am into it now, you still feel that you are always going to be an outsider kind of thing.

The relationship that evolved out of this that has grown and the networks are really incredible because that’s how it works. That’s just such an important part of the business relationship to them. That’s why I travel there a lot. I really do everything that I can to dive deep in heavily at first into it as I possibly can. You know, along that wave, my food preferences definitely shifted and what I wanted in a restaurant started to shift. I had this idea that I wanted for so long and that completely morphed into what I hadn’t expected, and I decided that I really wanted to open Sukeban which is temaki based you know, doing 1 or 2 things really well like sashimi and temaki. It’s definitely something that everyone thought that it would be a high end tasting restaurant, but it’s certainly a little more casual than that. I’ve been able to bring all of my experience and my focus in that from a Michelin level to the food which makes it stand apart a little bit more in this town. It certainly isn’t the kind of sushi that most people are used to, but that all kind of evolved from the Japanese relationships. The nori, the seaweed that we get, I have a very close relationship with a seaweed farmer in the Southern part of Kyushu in the Ariaki Sea and you know we’re the 3rd restaurant in the US to get their seaweed as a non-Japanese person for our restaurant. We couldn’t get that kind of access to those products without those relationships unless I was going out there and doing those meetings with people. That’s why it is so important to have this access because of the relationships. It’s amazing ingredients from these small producers that do 1 thing really well their entire life. Like, that focus, they have been doing this for generations.

I have a knife maker down in that area that actually helped me link up with this seaweed farmer and they have been around since the 1200’s and their story and their history is just insane. It’s hard for us to wrap our heads around that, especially Americans being so young as a country. It’s just the kind of stuff that blows your mind! The soy sauce makers, the brewers, the sake producers, the people that make miso - every time I go out there, I’m doing a workshop with somebody. I’m making miso, I’m learning how to brew, learning soy sauce. Not that I am doing it over here, but I’m learning that process, and I’m really happy to be able to explain that process to customers and my staff which I think is really important in the long run.

AM: The first time that I went to Japan a few years ago, I was struck exactly by what you just said. I would see modern buildings and then nearby, I’d see a building or structure that had been around so many centuries ago. You’re really struck by how we’re little babies compared to all this history!

CHEF JB: Yeah, it’s so silly!

AM: It is! It makes you think that when we’re here in the US, it’s only been x amount of years.

CHEF JB: Oh yeah, it’s just a blip.

AM: I love the fact that you have really immersed yourself into this and bringing that heritage so that people can have an opportunity to see it. When I think of Blacksmiths, I think of Paul Revere types.

CHEF JB: Yeah!

AM: What are the Blacksmiths of Japan – how are they different, are they using different techniques?

CHEF JB: Yeah I mean, there are different techniques that you see in different parts of Japan and that’s one of the biggest things that I have noticed. Because certain areas have older traditional methods that have been passed down. Certain areas do it one way while others may do it in another way. They all sort of source their steel from 2 similar companies. So steel a lot of times is the baseline and the common denominator, but the forging technique is certainly the difference. It’s like giving 5 different chefs a tomato and then to tell them to make something with it, you’re going to get 5 different products. So it’s the same kind of thing in knife making: heat treating, approach – everyone is an expert in there area. There’s a guy that forges the blade out. There’s a guy that grinds the blade down to its shape, there's someone who sharpens it, there's someone who puts a handle on it, and it's definitely more of an efficient process.

These guys are doing it on their own from start to finish. People ask here in America why knives are so expensive and it’s because they are importing Japanese steel. In Japan, the process is more efficient. You get more production level out of it even though it’s still very handmade and piece by piece.

We ended up in this town a few years ago that was our last trip before COVID. We met a sword maker who was part of this area that is very historically relevant in katana sword making for the shogunate during the time when feudal lords were running the country. This area was very prolific in sword making for that kind of stuff. So, because the river itself had a lot of iron sand in it, they would extract it, melt it down, and then make a steel called tamahagane and that tamahagane steel is very dense and very heavy. It almost feels like a meteorite when you hold it. That was the steel that was originally used, I mean Japan doesn’t have a lot of resources when it comes to steel. So that’s how they made it, they extracted it from the river. There’s a guy there that we met who is making his own tamahagane steel in the old way and you don’t see that any more. You can’t really even buy that steel.

You can in a very sort of limited allotment be part of a family heritage to get it. The fact that this guy is doing that and we were able to watch him and we had dinner with him, he was an unassuming guy who we met when we were going to our knife makers and they let us know about this sword maker who was going to hang out with us. From him randomly joining us, it ended up being a huge highlight of our trip. He only makes a certain amount of chefs knife’s a year, and now we have access to those. That’s where that stuff is born out of. He trusts us and we have a mutual relationship with one another. We have been buying knives from him. It will be the first time that I have seen him from that drip before COVID. So that will be really Exciting! His method of forging is so different than anyone else’s and it’s really hard to describe because he’s a sword maker and that’s the method that he was taught. It wasn’t necessarily meant for culinary style knives in the tradition of sword making. That’s how it was so interesting to see him forged.

These knives are incredibly well made which makes them pricey. People get disgruntled about the price points of some of these. They wonder why the knives that they see in their IG ads are $14.99 and these are $40. We have to create an incentive for this next generation to keep making knives. These knives makers weren’t really making a good living and they weren't charging enough for what they were doing. So we’ve come into this new era where we’re telling them that they have to charge more if they want to make a living as well as to encourage the next generation to be able to keep making knives. A lot of these guys are very old and their sons, because of the time frame when the Japanese economy was booming because of cars, electronics, and plastics – post war WWII, there wasn’t a market for culinary knives from Japan. It just wasn’t a market. Everyone was buying German steel and French knives. That was in the 70’s/80’s/90’s – it wasn’t until the last 20 years where people began paying attention to Japanese cutlery in a lot of ways. It’s not to say that they weren’t making these, they definitely were and there was a market for it in their own country, but they were not exporting. So, a lot of their sons, because there was no – I mean many of these families for 8 generations had these makers, but their son decides to go to off to Tokyo or Osaka to get a salary job because that’s where the money was and that’s where the market and the economy were shifting. So there’s this lost generation right now where the grandfather’s or just that much older and they don’t have the patience to teach. At this point, they should have been with them for their whole life to learn the trade. You’ve got this new group of people who are the younger generation in our age group that are in their 30’s/40’s where this group is trying to revive it and to continue it on.

Some of these guys die and it dies with them. We want this to continue on and we want for people to understand that that’s part of the deal and that they’re handmade, imported, there is a level of craftsmanship that is unparallel, and you have to support a reason for this industry to continue. If they’re not going to be able to make a living, then why will they continue? So that's the kind of shift that we have been noticing too. A lot of times, it takes us to be able to say, you should be charging more for these. I don’t mind paying more for them because I know that I will be able to get it on our side on the retail end and at the same time, we need to make sure that they are supported and continue on. We don’t want to lose this craft.

AM: What are the trends that you’re seeing in cutlery, in the knives right now and are there 3 knives that everyone should have in their home kitchens?

CHEF JB: Yeah! I think that the trend is definitely towards Japanese and I see a lot of marketing towards big Japanese products that are actually not made in Japan and produced in maybe a factory in China. It’s just a Japanese name so it sounds like you’re getting what you’re looking for. Education to us is the most important thing because a lot of that exists out there that you would not otherwise know. I think that the biggest trend is Japanese knives. I think that more and more people are catching on to it. It’s more like, we have to do our diligence to the educational part because you can get lost in the sauce if you really don’t know sort of what you are getting into.

That being said, I think that the 3 knives I would say in everyone’s kit, which even that changes because everyone is so different and knives are so personally. You definitely want to keep in mind what you cook the most of. It may not be the same as what I use or what I cook the most of. So those knife preferences shift and a lot of the Japanese knives are very task centric and they are not limited to those tasks, but they are very specific to the task. So I would say for sure, a Petty Knife and that name derives from the French – petite so it’s a small knife. It’s kind of an everyday utility, it’s a little more utilitarian. I think a lot of people got used to Pairing Knives. To me Pairing Knives, they have their role, but I think you can get more utility out of a Petty Knife and those come in anywhere from 4”-6”. They’re a little slimmer and you can do all of the daily tasks. They’re the ones that you keep on your cutting board.

Another one would be a Santoku - san means 3 and toku means virtues in Japanese. So the 3 virtues in the kitchen are fish, meat, and vegetables so that knife is kind of like the everyday for everything kind of knife. I don’t really use the Santoku a lot, but I think that the bulk of people know that name and they understand that shape. It’s a very approachable size and style.

Then the third one can really be a mixture of a few things. For me, instead of a Santoku, I would use a Bunka. Bunka is just a similar shape, but Bunka Bocho means like everyday house knife in Japanese. It’s got a more extreme tip that I would say verses a Santoku that has more of a rounded off tip and it kind of slumps off. But a Bunka, has more of a very sharp top drop point. So you get a lot more precision in the tip when you’re doing fine scallions. Those little things to me are important and that’s just me over analyzing it – ha! I enjoy a Bunka and that would be my second one and I think for a lot of people the Santoku is a lot more approachable.

The 3rd one could be an 8” chef knife, a Gyuto – gyu is cow in Japanese and uto means cow cutter, so that comes down to what they slice beef with traditionally. This knife is a traditional chef’s knife that’s 8.5” for the everyday.

That third knife could also be a Nakiri that boxy flat edged vegetable knife. It’s the shape of a small cleaver, but it’s not a cleaver for meat. It has a thinner blade meant for vegetable chopping and it has a flatter edge. It’s a more scaled down version of what you would see in a Chinese Cleaver. The Chinese Cleavers are used in Chinese cooking a lot for everything! The Nakiri is more of a very stealthier, scaled down version, more wieldy and easier to use. It’s not as big and it has a flatter edge. It’s better for chopping up and down, not meant for rocking. If you’re a rocker, rocking back and forth, everyone cuts differently.

So it could be one of those, or it could be a slicer. That third knife is kind of a variable within what you do.

AM: Whatever you lean towards in what you’re cooking.

CHEF JB: Exactly. Not to over complicate it!

AM: In addition to knives being offered, what are other items that are carried at Coutelier NOLA whether in your brick-and-mortar or online?

CHEF JB: We’ve got a myriad of products for everyday cooking at home, for professionals, and we wanted home cooks in South Louisiana who are very serious and fancy themselves as professionals at home, they wanted access to these same sort of things. So it’s really nice aprons, the knife rolls, the tool rolls, all of the very curated small tools that we use – the peelers, the microplane, etc. The things that I have used my entire career in the kitchens that I have worked in – everyone is using the same tools and that’s what we wanted to be able to bring people. We wanted a curated scaled down version, because you couldn’t necessarily find it in a one stop shop. You could find the spatulas and these small tools and accessories and items for your everyday kit. We have beautiful hand carved walnut spoons and spatulas from my buddy Kylee Thatcher up in Kentucky, she does Boothill Kitchen and I designed a Roux Spatula Paddle for making Gumbo with her, several years ago. That’s been one of our bestsellers especially down here. We packaged that with Mosquito Supper Club Cookbook which has been one of the bestselling Cajun cookbooks that have come out of South Louisiana in years! Melissa Martin, she has won several awards for it. So we’re catering to our culture in general and of course the overall scope of the tools that we have used. We also have Konro Grills, the Japanese firebox grills that everybody is using now in kitchens. We’ve got a whole pantry section filled with amazing ingredients and Japanese pantry items from very small producers all over Japan and some in the US. We have a lot of tinned seafood and I think that COVID made us pivot to have this pantry section because people were starting to cook at home more and have better ingredients, cooler snacks, and things like that. We try not to get too crazy into it and to still be very diligent about our selections. Like the sesame seeds and the sesame seed products that I use at the restaurant, the Wadaman family in Osaka, I just visited them this past May. They’re 5th generation sesame family who make these wonderful products and we sell it at the shop and we use them in our restaurant. Those are very intentional type of things and we have an incredible cookbook section as well and very dialed in.

AM: I know and myself included, a lot of people enjoy watching Top Chef and 5 Star Chef and all of these different competition shows. It seems like the one thing in addition to flavors and putting it together and that’s plating! The use of plating teasers is always something that we see. What are your tips that we should know when we’re using these tools?

CHEF JB: So I think it’s to the task. Like we have several different ones, we have 4 different sizes. Some are straight, some are offset so whatever is kind of comfortable for you. I have always used them in professional kitchens because you’re dealing with delicate products and delicate placement. I still use them everyday at the restaurant when I am doing sashimi dishes. The larger ones I use on the grill because I don’t like to use big tongs as they’re bulky and clunky. They can also kind of indent your food with the big teeth on the front. So we have these really cool 30mm Tweezers that you can use. I use them on the grill exclusively, but you can also use them for pasta making when you're making spaghetti or anything like that. I use them a lot in just my everyday approach to cooking and grilling. Sometimes they’re not going to be as practical, but you can use them to get into the pickle jar and all of those kinds of things. I use them to prune some of my houseplants. They really do have a good span of use. I keep them in kind of a ceramic crock with the rest of my tools at home and in the kitchen as well as work. I think that they are extremely utilitarian. You don’t want to get your hands too dirty and when you are dealing with delicate ingredients and their placement, they’re great so that your fingers aren’t smudging everything. Especially in a post COVID world, we try to keep our fingers out of things as much as possible and to still have a delicate touch to things.

AM: We talked a little earlier about your restaurant that recently opened. What does the name mean and what can people expect when they are coming in to dine?

CHEF JB: We opened July of last year, so it’s a little over a year now. Sukeban roughly translates to “woman boss” or “girl boss” because there used to be this time in the 70’s/80’s in Japan where there were these women that kind of formed these girl gangs around Tokyo and Osaka. They would meet up after school and women weren’t allowed to be in the male group of anything. So it was a time when women were forming their own independence. Japan is very patriarchal and set in tradition and social roles as well as social norms. So this was a time in Japan where women were coming out of their shell and it was almost like a women’s lib movement that was happening. The Sukeban was the leader of the gang and they formed these little motorcycle groups and they were just these little after school groups. Everybody in Japan wears the same school uniforms and it’s like a little navy sailor attire. After school, they would put these little pieces of flair to distinguish themselves in their group. They were not violent and I thought that it was a cool part of Japanese culture and it sort of died out. It’s represented in films they’re known as Pinky Grindhouse or Tokyo Grindhouse films. The Sukeban has definitely been taken to a fictional level in certain ways. I don’t know if you have seen Quentin Tarantino's (Pulp Fiction, Jackie Brown, Once Upon a Time in ... Hollywood) Kill Bill, but the scene where Uma Thurman is trying to get to Lucy Liu and kill 200 people in that room, and she gets to that girl right before her, that’s a Sukeban with the ball and chain.

AM: I was thinking that when you said it. She’s my favorite!

CHEF JB: Yes! So one of my dear friends, she’s a Japanese chef and a woman of many things. She’s a renaissance woman. She’s a graphic designer, she’s a fashionista, she’s a chef and she’s amazing. We met when she stajed with me in New Orleans probably 15 years ago and we became immediate friends. She was a large part of me getting deeply into Japanese culture as I am. She had her café and she wondered what it was that I was going to do? I mentioned this thought and felt that the name was kind of cool and she said that it absolutely made sense. Sometimes the older Japanese people give you a weird reaction, but the younger generation thinks that it totally makes sense. I wanted to make sure that it was kosher and I certainly didn’t want to piss anybody off. Then she ended up designing my logo and really helped me with that process and it kind of represents me in all of the things that I have done and she felt that it was me incarnate. Just like breaking the norm, a lot of times, I was the only woman in the kitchens that I worked in. I took it upon myself to open these businesses. It was kind of born out of that.

What you can expect from us is a really high level and it’s infancy, it’s a Japanese handroll bar. It’s an izakaya and an izakaya literally means, a stay drink place so people have an izakaya that comes in thousands of iterations. It’s usually a pretty late night kind of situation. It’s a bar where you get snacks and things like that. When I go to Japan, we go izakaya hopping at night. We bounce around and everybody kind of does their one thing well and then you go to the next one. The common denominator is that there are drinks involved and it’s a small and calmed down atmosphere and I wanted to create the aesthetic of a lot of the places that I had experienced and to work with my architect on that. It came out to this beautiful space with an L shape bar and very much so the aesthetic that I have been experiencing.

Louisiana is such a huge seafood area and I thought that the parallel between Japan and South Louisiana with the seafood and the rice, and the drinking culture – these are like 3 pillars in a lot of ways. We are a huge rice producing region here, I don’t use Louisiana Rice because we haven’t quite developed the right one yet for sushi, but I do work with a Japanese American family in California, the Koda family at Koda Farms, we use their rice. They’ve just got this amazing story as well. For me, that was the draw. I have always been a big seafood head. Rice growing up as a Cajun is as much a staple as someone who grew up in Japanese culture. We would just eat buttered rice sometimes and we would have these cravings. It was kind of silly, but in a lot of the same ways, it was as important to a Cajun table as it would be to a Japanese table. I’ve always been obsessed with rice and all rice is different and cooks differently and then you look at how to really dial that in. So I wanted to feature that, I wanted to feature seafood besides gulf and Louisiana seafood, we do fly some stuff in from Japan once a week from the Tokyo fish market. We use other amazing domestic fishermen and fisherwomen around the US, sustainable products all over. So our scope on the fish purveyors is pretty wide. Bringing that level and quality of seafood with that nori, that we went to the bottom of Japan for – it’s harvested for us, it’s baked for us, it’s shipped for us. It’s incredibly crunchy and crispy and is good for you. It’s a superfood as well. This food is incredibly healthy as well as premium quality. I really wanted to focus on doing those things well and letting those ingredients speak for themselves. That was the biggest part for me. I didn’t want to over complicate it by putting in too many sauces because oftentimes, you can’t taste the fish or what the star of the dish is. So for me, that is the biggest part of what I wanted to do and to do that really well – sashimi and temaki rolls. That can sound very simple, but when you take the attention and the time to source those things and to make sure that all of these hyper quality ingredients are all in one bite, that for me is everything.

We’ve got a few little apps and starters and things like that. We wanted to have a place where you could get great sake and it’s hard to find great sake down here. Whether it hasn’t been sourced well or whatever, a lot of people would say that they didn’t really like sake because so many people have had bad sake here. Or maybe it’s always served warm and that’s not the only way to consume it. Warm sake does exist, but oftentimes here, it’s a mass shitty sake. So cold sake, we exclusively do cold sake here and I’m constantly going to sake breweries in Japan to understand the process and to better source better sake. I think that in the next 5 years, we’re going to see a mega wave of sake hit the way that we kind of see it coming. You know, there’s a certain kind of underground where a lot of us have this idea in mind of what we’re helping to shape as far as that. It’s like when Natural Wines started having its moment.

It's a similar thing. My friend Shawn Williams, she’s a sake aficionado here in town and we do a lot of small events together. She and I went to a sake event in NY, a few weeks back and went to Le Bernardin and we wanted to see the kinds of sake that they had on the menu. We decided to just drink sake with the whole meal. They had 2 bottles on the menu and that was it. It blew my mind. They were really good and we had both of them and then the somm ended up talking to us for awhile and then he ended up coming as he was off the next night and he went to the event with us.

AM: Yeah, you’re talking about the Joy of Sake?

CHEF JB: Yes, the Joy of Sake. Yeah and that was Brendan Kimball, one of the somms at Le Bernardin. So he came with us and we ended up tasting all night and enjoying sake and then we went to dinner after and now he’s saying it’s ridiculous that they only have 2 sakes when there are so many amazing ones out there. It’s the little stuff like that where I’m excited to see where it goes. There are some sake breweries in Brooklyn, and it’s happening. I think that the biggest part of it is water and that’s number 1 when it comes to sake. That’s why Japan has such great sake – the great water. Here, it’s hard because if you’re not sourcing directly from well, an aquafir or spring water, it’s really difficult when you’re just using filtered water to make sake. It’s kind of creating dead sake without much flavor profile and that’s the difficult part in America that we’re going to have to get over as we’re used to just turning on the faucet. I think that that’s the thing that I learned in Japan. All of these places I visited, there were 300/400 year old sake breweries that are all lined along a river watershed and there’s a reason for that. It’s rice #2 – so it’s water quality and rice quality. The biggest consumer of sake is the Japanese people. If it’s small batches or if they limit out what they can produce a season, the Japanese will consume it all. Oftentimes, we’re left with what’s left and I think that that’s all changing. I think that that besides the temaki and that we did that well, I wanted to make sure that we had an incredible sake selection so it can change people’s ideas on what sake is.

AM: I totally agree and I love drinking it with so many different things!

CHEF JB: Right, same! Pizza!

AM: For sure! Pizza, tacos, chicken wings, steak, there are so many amazing pairings that are perfect for it beyond what many believe to be the fit. I’ve had friends raise an eye when I had it with something that they didn’t think it was meant to be paired with it. Here in NY, there are a lot of options and yet there aren’t.

Right before the pandemic, I feel that 2 or 3 years right ahead of that, people were really big here in NY on cider and cider production and it was having an entire moment and I went to a few places in Brooklyn that were focused on that.

CHEF JB: Right!

AM: I kind of agree with you that sake is the next one that will have that really big effort I hope.

CHEF JB: Exactly! I hope it's not fleeting!

AM: With so much that you do with your restaurant, you have your store, you have these amazing buying and research trips that you’re doing, are there other projects that you're doing that are food event oriented or a cookbook or any of these kinds of things that we should keep an eye out for?

CHEF JB: Not right now. I think that I have mellowed out a lot. I think right now just focusing on the knife shop and the restaurant and not getting myself into too much, too fast – it’s about balancing and that whole dichotomy. Right now, my focus is on travel so I think that the next thing that I would want to do is to host trips in Japan. I think that’s a big part of what I see coming up next for myself and I know that every time I go, people say that they want to go to the next trip and the next trip. You just have this line of people that want to go with you. That’s awesome, but you can’t bring huge groups, but certainly a smaller handful of people. You want to share it with people and it’s hard for me to articulate it to people if they’re not there to experience it. You want to definitely have some shared experience with that. For me, that’s the next big thing. I don’t have a book in the works right now, but maybe down the line. It would be cool to see another location of Sukeban somewhere. I think it’s built to be able to replicate in that way, but not in a franchisee situation. To be able to bring that to another town or another city and that experience is pretty special. My focus is to continue to dial in my relationships and to find more incredible ingredients, more incredible makers. I’ve already been twice this year and I’ll be back a third time in Oct.

I think that for me, that’s the biggest thing. I would like to and I think with the travel aspect, it’s a huge part of it and a bit more immersive for people that don’t know how to access a lot of the things that I have had the privilege of accessing through the years of doing it. I’m more of a simple girl. But now that the restaurant has been there for a year, people are always reaching out for projects and things like that. So local food events like I’m going to do Oyster South out in Georgia this Oct when I get back from Japan. It's a really cool event with a bunch of chefs about sustainable oyster production in the South and things like that. More awareness about sustainable seafood and I’m trying to be more about that conversation and movement a little bit more.

AM: If we were to come to your home, what are 3 spices or ingredients that you have always at the ready at home that can make the most versatile dishes that you enjoy making?

CHEF JB: I definitely think that furikake is one of those – the rice seasoning. It’s sesame, seaweed, a little salt, a little sugar, a little katsuobushi flakes, and bonito flakes. I think that that’s something that I put in a lot of stuff. I go through a lot of it. Definitely chili crisps for sure. Japanese chili crisps are absolutely my favorites and there are a million in one of those things out there now. There’s one in particular that I really love and use and it’s a huge staple that I kind of roll through. I think that tamari, tamari is more on the gluten-free style soy sauce. To me, it's kind of almost a thicker consitency - not syrupy – but thicker than what you use for soy sauce. But it’s this sweet umami packed flavor. You can use it on anything. I use it dress tomato salad, cucumbers, you don’t have to even with just Japanese things. It can be a marinade for chicken, fish, or whatever. It’s just one of those incredibly versatile ingredients. We have it in the shop and the same one that we use in the restaurant is the one that I use at home. It's incredible and I think that it’s one that people don’t think to use a lot. It doesn’t have a dark nature soy sauce or color scheme to it. It’s lighter, but it’s also gluten-free so if you have gluten issues, I’m not, I don’t have them – I just prefer that. Of course the Wadaman sesame seeds just to throw in a fourth. I use them on everything. I roll through that stuff!

AM: I’m sure you do! I would love to have a plate at your house to see what you’re making!

If we were coming over for brunch as we’re still in summer, what would be the meal that you would cook?

CHEF JB: Hmm brunch! It would probably be a crawfish étouffée just to be real. As that’s a very frenchy sort of thing. It’s on the stove all morning and by the time you look at it, it’s ready to go! That or man, that could shift! It could be a crazy bagel and lox spread with Ikura, the Japanese Salmon Caviar or like Trout Roe, stuff like that. I would probably do something along those lines.

ATHLEISURE LIST | ICHIBANTEI

Ichibantei first opened in 2010 in a small East Village space. As the restaurant became known for its Japanese home cooked food, reggae and vinyl cover décor, it outgrew the space so when a large space became available just two blocks away, the owners jumped at the opportunity. Opened in June, the new, multi-level space with 90 seats and soaring ceilings. The dark space features black walls, gold accents, a long white marble-top bar and infinity mirrors.

Owners Ruth and Shin Araki opened the original location of Ichibantei on East 13th Street in 2010 serving classic Japanese dishes, as well as teishoku Japanese set meals just like their mothers made when they were growing up in Japan. Ruth, who learned to cook from her mother as a child in Kumamoto, makes almost everything from scratch just as she was taught.

The décor pays homage to their Japanese roots and Japanese pop culture, as well as the building’s history, combining sleek design and comfort food. In the past, it was home to a movie theater (as well as a music hall and before that a restaurant in the 1880s) so the owners have taken inspiration from Japanese film history with oversized posters from Yakuza and film noir classics adorning the main dining room. The more intimate mezzanine dining area, which overlooks the dining room, recalls the original restaurant with walls covered in vinyl record covers and wooden booths. The vibrant lip murals by Japanese artist Cazul are fun surprises that can be found in different bathrooms in the restaurant.

When eating here, the food is great for sharing and goes well with drinks, including Agenasu to start, which is a Japanese eggplant served in a savory dashi broth; Ichibantei Steak grass-fed Angus beef topped with garlic chips and accompanied by a housemade steak sauce; and the Chicken Nanban juicy, battered chicken marinated in a sake, ginger and garlic, served with a tangy sauce. All entrees are served with fluffy white rice, miso soup, and a salad in the traditional teishoku “set meal” style.

We recommend enjoying their Toki Highball, a classic Japanese whisky soda with Suntory Toki whisky, traditional Japanese spirit shochu (they have options that are distilled from sweet potato, rice and barley) served with fresh frozen fruit like mixed berries, pineapple or peach, as well as refreshing frozen sake cocktails they’re debuting for the summer with flavors like mango and peach.

THE ART OF THE SNACK | SUSHI AMANE

Last year, we covered MIFUNE in our feature, Athleisure List. Now, we're sharing another restaurant located in the lower level of this restaurant, known as Sushi AMANE. We took a moment to talk to Executive Chef Tomoyuki Hayashi who creates an omakase menu at his Michelin starred restaurant with two seatings. He talks about how he stays inspired to create the menus, dishes he suggests and how you can enjoy your next meal there.

ATHLEISURE MAG: Executive Chef Tomoyuki Hayashi, tell me about where you trained and your culinary journey that brought you to Sushi AMANE?

EXECUTIVE CHEF TOMOYUKI HAYASHI: After graduating college, I apprenticed under top sushi masters in Tokyo for many years. The president of the company I was working for at the time offered me an opportunity to work in New York. I jumped at the opportunity to work and live overseas. At the time, very few sushi restaurants offered omakase, most of them were serving set menus and a la carte menus. Before helming Sushi AMANE, I was the Executive Chef at Sushi Azabu for many years. Back then, Sushi Azabu was one of the first Japanese restaurants that introduced the omakase concept to New Yorkers. With omakase now mainstream and Sushi AMANE being an omakase-only concept restaurant, I have taken on the role of Executive Chef at Sushi AMANE to offer my own rendition of omakase.

AM: Tell me about your 8 seat omakase counter that is located inside MIFUNE. What can guests expect in terms of the ambiance and how they can get there?

EXECUTIVE CHEF TH: Although Sushi AMANE and MIFUNE share the same entrance, we are two separate restaurants and operate independently of each other. Once you enter MIFUNE, guests will be guided by our staff to Sushi AMANE. In a way, Sushi AMANE has a speakeasy vibe as it’s hidden away on a separate level. Most MIFUNE customers are unaware and surprised to learn that there is another restaurant on the lower level and I think Sushi AMANE customers will pleasantly enjoy the short journey from MIFUNE to our intimate space below at Sushi AMANE.

AM: Tell me about your omakase menu.

EXECUTIVE CHEF TH: Every omakase is different but my omakase course flow is as follows.

The omakase starts with a light white fish, a meatier full-bodied fish, then shellfish that’s different on the nose and in texture, followed by a warm dish, a palate cleanser course and finally the nigiri courses. With this course flow in mind, I plan and order my fish from Toyosu Fish Market and the fish market in the Kyushu region of Japan.

AM: How do you go about planning what will be on the menu and is it based on seasonality?

EXECUTIVE CHEF TH: I create my omakase with the best ingredients the market has to offer, so I do not rigidly stick to seasonality. It just happens that most of the times the best ingredients are at its peak during a particular season, so the seasons are reflected naturally throughout my omakase.

AM: Where do you get inspiration from when you are planning the service?

EXECUTIVE CHEF TH: I get a lot of information and ideas for my omakase and learn about the trends of the Japanese market by talking to my fish vendors, fellow sushi chefs, and industry insiders. Lately, YouTube and Instagram have been a great source of inspiration and creativity. It’s a great way to follow the latest trends in Japan as well.

AM: What are 3 dishes that you like to include in your rotation of omakase menus?

EXECUTIVE CHEF TH: For the small dishes served before the nigiri courses, the inclusion of my grilled sea perch over uni rice is a must. In the nigiri courses, I always include baby red snapper and bluefin tuna. All wild caught and I always source them from Japan for their superior flavor.

AM: For those that have never enjoyed omakase, is it just one menu offered each night or do you offer an option of omakase menus that you can select from?

EXECUTIVE CHEF TH: At Sushi AMANE, I offer an omakase course that can be enjoyed by customers who have never experienced omakase and experienced omakase diners alike. If someone has a dietary restriction to certain fish and seafoods, I am happy to adjust the menu for them as well with advance notice.

AM: What are 3 sakes that we can enjoy with our meals?

EXECUTIVE CHEF TH: At Sushi AMANE, we have a wide range of sakes that changes frequently, but my favorite is Kikuhime B.Y. Library Release 2005, Daiginjo. As the name suggests, it is a rare sake that has been carefully aged for over a decade before being released and it pairs beautifully with sushi omakase. Daiginjo sakes are typically aromatic and pair well with sushi, but I am particularly fond of Kikuhime’s dry and crisp style that compliments my sushi well.

AM: With only 8 seats available, how many seatings do you have and what is the reservation process? Can a party book all 8 tables for a private dinner?

EXECUTIVE CHEF TH: There are two seatings each night Tuesday-Saturday at 6pm and 8:30pm. Reservations can be made through Resy. A party can buy out all of the seats for a private dinner by emailing us at sushiamane@gmail.com.

THE ART OF THE SNACK | SARASHINA HORII

This month's The Art of the Snack introduces our readers to the historic Sarashina Horii which opened in Japan in 1789. We connected with Chef Tsuyoshi Hori and General Manager Rui Higuchi which shares the historic nature of the restaurant as well as its location here in NY. We also learn more about soba and the culinary heritage that is involved. As always we find out about what appetizers, entrees, cocktails and desserts we should keep in mind when dining their next as well as what they are offering during NY Restaurant Week.

ATHLEISURE MAG: Before we delve into Sarashina Horii here in NY, can you tell us about the history and when it was initially established?

CHEF TSUYOSHI HORI: Sarashina Horii has a history that dates to 1789 and has served its soba noodles to the Shoguns and Japanese Imperial Household. It is now overseen by ninth generation soba maker and owner Yoshinori Horii. Japan has three main families associated with the art of soba making and Sarashina Horii is known for its unique white soba using only the very core of the buckwheat seeds. The husk of the seed is polished off the way rice is polished to make sake. This white soba is much different type of soba and has been made this way by the family since the late 1800’s and the Sarashina type of soba is quite rare in Japan as well.

AM: You have three restaurants in Tokyo and one here in NY. Why did you want to have a location here and what are the differences/similarities to those that are in Japan?

CHEF TH: Yoshinori Hori chose New York for their first location outside of Japan because New York is known for its diversity, which will allow him the opportunity to introduce his soba to many people. Mr. Horii is also proud of the historical connection between the U.S and Japan as the founder opened the first restaurant the same year George Washington was inaugurated as President of the U.S.

AM: Is there anyone from the Horii family here in NY that ensures that this restaurant has the same standards as those that are overseas?

GENERAL MANAGER RUI HIGUCHI: Many of the recipes we use are from Sarashina Horii in Japan and made within their standard. While no Horii family members are in New York, Sarashina Horii is in good hands with Chef Tsuyoshi Hori. Chef Hori started to make soba at a young age since his family also runs a soba restaurant in Japan. And at the age of 20 he started working at “Sarashina no Sato” in Japan and learned to make handmade soba as well as Sarashina Soba. Throughout his training, he developed a strong desire to keep the soba tradition alive, his goal is to make everyone enjoy soba. Introducing Sarashina soba outside Japan is a big step toward achieving that.

AM: Tell us about your Executive Chef, Tsuyoshi Horiand how he came to Sarashina Horii?

GM RH: Our chef is Tsuyoshi Hori trained at the highly regarded “Sarashina no Sato” in Japan with Yoshinori Horii, the current ninth generation owner of Sarashina Horii. When the Sarashina Horii project was in the works in New York, Tsuyoshi was working in California. When he heard about it, he did not hesitate for a moment to reach out to us to be able to collaborate with Yoshinori again. Tsuyoshi has a strong passion for making soba and honing his craft in the art of making soba.

AM: Can you tell us about soba noodles and why this culinary heritage is being featured for guests to enjoy?

CHEF TH: Soba has a history of more than 300 years and in order to preserve this tradition it was necessary to make soba available to people outside Japan as well. Most people these days look at soba as a healthy alternative compared to the other noodle options, mainly be cause soba is known for its low glycemic index. But soba has more to offer than just a healthy meal. Soba noodles are known for its aroma and refined flavor. Also, it can be enjoyed equally hot or cold. Those who already tried different types of soba should definitely try Sarashina Soba to enjoy a unique experience.

AM: Are there key soba noodles that are available and how are they made?

CHEF TH: We recently started to offer Kawari soba with different ingredients kneaded into the noodles, giving the soba the aroma, taste and color of the ingredient. Every two weeks, we feature a different Kawari Soba. We started with our Shiso Soba a couple of weeks ago and just introduced a new one this week: the Kuro Goma or Black Sesame Soba. Kneading the black sesame into the soba dough gives it that nutty aroma which is quite a different experience compared to the Shiso. We only serve the Kawari soba cold because it’s the best way for to enjoy its aroma and refined taste.

AM: Can you tell us about the ambiance of Sarashina Horii when guests are coming to dine?

GM RH: The New York location has a full bar displaying our selection of sake and Japanese Whiskey, which is different from Japanese locations. Sarashina Horii logo is placed discreetly on the door but our stone mill displayed by the front window always helps indicate where our restaurant is located. Many of our patrons love to take pictures by the window to showcase the stone mill and our logo.

Unlike in Japan, here we do not offer Ozashiki seating where customers can take off their shoes and sit on a flat cushion to enjoy their meal but many of our guests are blown away by the chic design - the soaring dining room features a ceiling installation inspired by soba noodles as well as a rock garden inspired by traditional Japanese temple gardens.

AM: What are 3 appetizers that you suggest that we should try when we eat there?

CHEF TH: I would highly recommend ordering the Tsukune Japanese Duck Meatball, Kakiage Shrimp Tempura with Mitsuba (a parsley-like herb), and Tamagoyaki Egg Omelet appetizers. Tsukune is often made with chicken but we make ours with Rouen duck thigh, it is served on a hot stone plate in a shape of a hamburger steak.

The Kakiage is one of our signature appetizers, we put a lot of effort into it – it has to be carefully fried one at time to preserve its presentation. We also highly recommend guests save some of their crispy kakiage batter flakes for their soba soup coming later as the flake gives it additional flavor.

Lastly, our Tamagoyaki is something you must try. It is common for people to judge a sushi restaurant by their tamago egg cake - you can see how much effort a chef puts into the flavor, showing proficiency and skill. At a soba restaurant, it is important to try tamagoyaki because every soba restaurant’s version will taste slightly different because of the dashi broth that they use. Dashi is a quintessential ingredient for most of our soups and sauces.

AM: What are 3 entrees that we should order when we’re there with family and friends?

CHEF TH: Well, you certainly must try the soba. Hot or cold, you can’t go wrong either but ideally you should try both on your visit. When you eat the soba cold, you can fully enjoy its aroma and texture. It is accompanied by a dipping sauce “soba tsuyu” which is saltier than the hot soba broth. Hot soba is served in a bowl of hot light broth, we make it that way so that guests can enjoy drinking the broth at the end.

Our Sarashina Soba is a must try when visiting the restaurant. When using only the inner most part of buckwheat seed, the noodles are pure white in color with a delicate aroma. The texture is very silky smooth and flavor refined.

Our Duck Soba either hot or cold Kamo Nanban or Kamo-Tsuke is very popular. We locally source our Rouen duck breast from Hudson Valley, which we sous vide right away when the are delivered in order to offer the best flavor. The duck adds great flavor to the soup and pairs well with the leek served in the dipping sauce and soup as well.

AM: Are there 3 desserts that we should be thinking about when ordering?

CHEF TH: Our home-made desserts that should be tried are Matcha Tiramisu, Hoji-cha Blancmange and Blueberry Apricot Pudding. The Matcha Tiramisu is the signature and most popular.

AM: What are 3 cocktails that you suggest that we should have when eating there?

GM RH: Three signature cocktails not to miss are Shitakiri, Sarukani, and Momotaro. The names are all inspired by traditional Japanese folktales. Shitakiri is with mezcal, tequila, chili tincture and yuzu is spicy and smokey – the crowd favorite. Sarukani is made with Japanese gin and shochu and fresh persimmons now in season. Momotaro is our smoked twist on the classic Old-fashioned with Japanese whiskey and limited-edition sake. It is great for whiskey lovers and has a show-stopper presentation with smoke released at the table.

AM: For those with dietary needs such as gluten-free, vegetarian/vegan - what are dishes that you suggest that they should keep in mind?

CHEF TH: We have some meatless options but, unfortunately, we currently do not offer any gluten-free and vegetarian options due to the fact that the dashi stock for our soups, cold dipping sauce and vegetables is bonito-based. And while Sarashina soba is low in gluten, it is not 100% gluten-free.

AM: Tell me about your tasting menu - why were the dishes on it selected.

CHEF TH: In Japan “Soba Kaiseki” is a soba tasting and we wanted to present a similar menu to show there is much more than soba, spanning all the sections of the menu and include ingredients such as “Kaeshi” infused soy sauce that has been aged. Our tasting menu was created to pair well with soba but, of course, hot or cold soba is the centerpiece of the tasting menu.

AM: Are you participating in restaurant week and what are you offering guests?

CHEF TH: Yes, we’re participating and offer a 3-course tasting menu for $59 that features a choice of Salmon Carpaccio or 2 types of Sashimi to start, followed by Sarashina Soba with Vegetable Tempura and choice of hot duck soba, hot mushroom soba, cold soba with a hot dipping broth with duck or mushrooms. For dessert: Hojicha Tea Blancmange; Blueberry Apricot Pudding and Matcha Tiramisu.

THE ART OF THE SNACK | J-SPEC

This month's The Art of the Snack takes us to J-Spec Wagyu Dining and Esora Omakase in NYC. Anytime we have the chance to have Wagyu, it's definitely a treat and being able to have an Omakase meal is another one of those indulgences that have to be enjoyed. We chatted with Chef Koichi Endo to find out about this restaurant, what we should get when we dine there next and more!

ATHLEISURE MAG: Tell me about your culinary background and how it led you to J-Spec Omakase.

CHEF KOICHI ENDO: I worked at the Michelin starred Tempura Matsui, the first authentic tempura restaurant in New York City, for 4 years from the restaurant’s opening. I was trained by Mr. Matsui himself, who was a tempura master in Japan before moving to New York to open his own restaurant. He was the executive chef at that time and, sadly, has since passed away. I was the last person trained by him and learned the art of tempura from him. Combining my love of tempura and J-Spec's focus on wagyu, Esora Omakase counter allows us to showcase both sides. I’m also excited to be able to offer "wagyu tempura" since no other places serve it as traditionally in Japan meat is not used in tempura dishes, which feature vegetables and seafood.

AM: What can guests expect when they come to dine at J-Spec Wagyu Dining?

CHEF KE: At J-Spec Wagyu Dining guests can enjoy real A5 wagyu prepared with various cooking methods, from raw in a tartare or sushi to grilled steaks and many different options in between. A5 wagyu is the highest quality rating of Japanese wagyu beef. It is known for intense marbling, which results in exquisite flavor, texture and tenderness. Because our parent company, Tomoe Food Services, brings some of the best wagyu available in Japan to New York (and Miami), we not only have access to the best of the best wagyu, but are able to offer it to our guests at a more affordable price point. At J-Spec Wagyu Dining, guests can try different types of wagyu from all over Japan, some of it very rare and produced in small amounts like the Ozaki beef from a single farm owned by Mr. Muneharu Ozaki in Miyazaki Prefecture or Hida beef from Gifu Prefecture, which we will be featuring at the restaurant in September, when we also launch Esora Omakase next door to Wagyu Dining.

AM: What are 3 appetizers that you suggest that we should enjoy?

CHEF KE: A la carte at J-Spec Wagyu Dining: Wagyu Tartare, Foie Gras & Uni Macaron is a decadent dish that combines fresh raw wagyu with foie gras and sea urchin for a unique and delicious experience.

Overstuffed Wagyu Sushi is over the top (as the name suggests) with a slice of seared wagyu over rice accented with pickled takana (mustard greens) and nori that’s topped with ikura (salmon roe) and sea urchin.

Wagyu, Uni & Caviar Hand Rolls – another delicious combination that showcases the wagyu.

AM: What are 3 entrees that you suggest that we should order?

CHEF KE: A la carte at J-Spec Wagyu Dining:

Wagyu Flight is a tasting of two kinds of wagyu that usually comes with the prized A5 Ozaki Beef strip loin and another A5 wagyu, depending on what’s best that day. You will discover how very different the two types of wagyu are even though they will be the same cuts.

Ozaki Striploin Steak – this is a real treat as no other restaurant in New York uses Ozaki beef. Usually, the origin of the wagyu brand name is the prefecture of the origin or a local specialty. However, Ozaki beef is named after Mr. Ozaki. Ozaki beef is truly exceptional with well-balanced flavors compared to other wagyu.

Ozaki Surf & Turf is a J-Spec original dish composed of sliced Ozaki beef, sea urchin and shiso leaves. We sear the beef tableside for the guests, then top it with uni and wrap in shiso to serve.

AM: For our readers that have not had the experience of Omakase, what is it?

CHEF KE: Omakase means "up to the chef," the guests let us create a meal for them. We use the best seasonal ingredients available at the moment to prepare it, paying attention not only to the flavors but also the presentation and aromas for a full sensory experience for our guests.

I base my approach on three elements: "Shun" Present, "Nagori" Past, "Hashiri" Future. Shun presents that the best ingredients of the season, Nagori represents ending season for some of the ingredients that are about to disappear and Hashiri presents that first harvest of the coming new season.

AM: Tell me about Esora Omakase and what this menu is like.

CHEF KE: Esora Omakase is a more intimate experience, seating only up to seven guests at a time. The omakase showcases both best quality wagyu and the art of tempura. It features 8 courses, although the tempura part of the menu includes 9 or more pieces served one by one with all the traditional accompaniments so the entire experience takes about two hours. The tempura pieces include lightly battered seafood from Japan, seasonal vegetables, mushrooms, and filet mignon of wagyu wrapped in shiso leaf – nobody else is serving wagyu tempura. Other parts of the omakase include seasonal appetizers, sashimi of fish, wagyu sushi (raw and torched), fragrant broth with seafood and mushrooms, grilled A5 wagyu, shokuji rice of the day, dessert and tea. The menu is seasonally driven and will be changing frequently.

AM: What sake pairings do you suggest when enjoying Omakase?

CHEF KE: We have a sake pairing designed to complement the food, which features about eight different sakes from Japan, ranging in flavors, body, styles and aromas. We also have a list of sake by the bottle so guests can choose their favorite sake or discover new ones.

AM: When you're planning your menu, what are the items that you like to offer and how does seasonality play into this?

CHEF KE: I always focus on using fresh, peak quality ingredients to truly experience the season. I love going to the greenmarket to buy vegetables and how they change with the seasons. I want our guests to enjoy the different ingredients the four seasons bring us and create memorable experiences for them at Esora Omakase.

AM: You open in Sept as we begin transitioning into fall and looking towards the holiday season. What are you looking forward to with the restaurant?

CHEF KE: Autumn is the time of harvest, there are so many beautiful seasonal ingredients going into fall that I’m excited about and look forward to serving our guests, like matsutake mushrooms, for example, coming in October.

AM: Are there plans to open additional locations?

CHEF KE: Yes, there are plans to open more restaurants in the future. J-Spec Wagyu Dining was the first restaurant for our parent company and Esora Omakase grew out of that. We will be creating other dining concepts but wagyu will always be the core ingredient.

HIGHER ART & GOOD EATS WITH RON SILVER

We head to the studio office of Ron SIlver's restaurant, Bubby's in the Meat Packing District. Bubby's also located in Tribeca as well as 6 outposts in Japan and is known for its comfort foods. We found out about how he created one of the quintessential destinations for brunch with his passion for great food and keeping it simple. We also talked about how his interests and passions in CBD and THC that led him to create Azuca which compliments food as well as the love for creating art which you can see in his restaurants as well as his show in Mexico City.

ATHLEISURE MAG: So what was the moment that you realized that you wanted to be a chef?

RON SILVER: I would say that there were multiple moments where I realized that I wanted to be a chef. One of the things is that when I was a little kid, I realized that I loved to cook and part of that was because it was mischief – it was fire and knives. So, I take to mischief very well and then I would say another small thing was that my mother took my $5/a week allowance from me and I went to get a job washing dishes. That was $80/a week so that was another realization that was my spot. I washed dishes for a long time.

AM: So when did you wash dishes?

RS: When I was 13.

AM: Ok!

RS: And I washed dishes until I was 21 in and out.

AM: That was a long time to wash dishes.

RS: I liked washing dishes – I did other things in between. I was washing dishes in Alta Ski Resort and I wiped out and broke my rib, I was out for 6 weeks. So I decided during that time that I would be a chef. So I think that was when I really decided to go for it when I was 21.

AM: So what were all the places that you went to in terms of culinary school or restaurants that you worked for prior to coming up with Bubby’s?

RS: I worked for some hotels for awhile and then I moved to Atlanta because I lived in Salt Lake and there wasn’t any real good dining there. I moved to Atlanta and worked for some of the best restaurants in Atlanta and I was offered a scholarship to the Culinary Institute but I did a quick cocktail mathematics and realized that I couldn’t afford that scholarship and didn’t go to school. I moved to NY when I was 24/25 and just worked my way up and I opened Bubby’s when I was 28.

AM: What made you realize that you wanted to open this up and to create this kind of cuisine here?

RS: Well the style of cuisine in the 80s was really weird, nouvelle cuisine with small plates and small portions and I wanted a place that really had good home cooking and large portions on small plates. I really just wanted to cook the food that I wanted to eat.

AM: What’s the average day like for you, being at Bubby’s?

RS: I’ve been running Bubby’s for a long time, 28 years - so my average day at Bubby’s, I am sort of regimented about how I do what I do. I go to Tribeca and have a coffee and go around and talk to everybody. I go around and kind of see if things are looking good and then I come up to Highline and I do the same thing and then I come up here to my office and I’m a painter. So that’s what I want to do when I come up here, is paint. Once I know that everything is kind of locked down, I can paint. I am also in the cannabis business.

AM: We’re going to get that too as well. So you have the 2 restaurants here and the ones in Japan as well.

RS: Yes, 6!

AM: How do you decide where the next place will be for your restaurant and the community that it serves?

RS: Well I suppose that the world decides for me. I’m not a business person really. So the Japanese people called me 10 years ago and I was like, “there’s no way that I’m doing that” and then we were having lunch the next day and I was walking around the space about a week later. I don’t really make a plan.

AM: Do you think that you would create another concept that is outside of Bubby’s that’s something different?

RS: It’s a good question. I don’t have a lot of reason to do that, but at the same time, I do come up with a lot of ideas that are interesting sometimes so I think that the jury is still out on that.

AM: We were at the Specialty Food Show here in NYC and we saw Azuca. We know that you launched it last year. Can you tell us more about why you are in this space and what made you want to create this?

RS: I’ve been in cannabis space since I have been washing dishes really. So, I’ve smoked weed since I was a kid - like everyone in the kitchen does. I think what really inspired me to get into this business was that I felt that I really had something to offer it. Maybe 6 years ago, I discovered that there was a very large problem which is how cannabis edibles deliver. So I really set up to solve that problem in that regard. I was able to make really good progress with that. In a way, it sort of fell in my lap, but I did a ton of research.

AM: What did you initially launch and are there more launches for this year?

RS: So what we have is a technology really. Azuca is a cannabinoid edibles technology and what that means is that it allows edibles to be consumed in an understandable way which is helpful for people who want to take cannabis or CBD or also for people who want to make edibles. We’re very much in the business of helping people understand cannabis edibles.

AM: What are your plans for that looking at the rest of this year and going into next year?

RS: Well, we’re working with some of the biggest cannabis companies in the country and we’re just getting started with those guys. We are selling CBD, edibles – like our sugar Azuca packs which will be available online and in stores soon. We have THC edibles in Massachusetts with a partner up there and we are also talking to people and other countries about CBD stuff.

AM: You’re also a painter. How long have you been painting and what is it about that that draws you to that form of creativity?

RS: I’ve always been an artist and I started Bubby’s so that I could make art. I can’t really answer what draws me to it. I know that if I don’t do it, I get very crappy.

AM: How many paintings do you create a day?

RS: It depends. I am always working on something. At the moment, I’m doing it on paper which is a little quicker than oil paint. So then all these paper things will be mounted on fabric so that is going to be a big job. I can paint a bunch of things it’s just going to take forever to get them mounted.

AM: Will you ever or have you ever been in a gallery?

RS: I had a show in Mexico City in August.

AM: Wow how exciting! How many pieces were in that show and were you nervous?

RS: 40 pieces and yes it was my first show!

AM: Congratulations! What are 3 signature dishes that we should eat when we come to Bubby’s?

RS: Well the Fried Chicken and pancakes, that’s a thing to eat, we have really good Watermelon Lemonade – that’s a thing to drink and the biscuits! Well the burgers are great too!

AM: When you’re not painting and you’re not focused on Azuca and Bubby’s – what are 3 things that we could find you doing in terms of relaxing and getting your athleisure on?

RS: Smoking bong hits, reading and I have 4 kids.

AM: Do you have any philanthropic efforts that you are a part of that you would like to share?

RS: Bubby’s does a lot of philanthropy. We give stuff to people all the time and support a number of things like New York City's oldest men’s shelter - New York City Rescue Mission. Azuca will have a huge amount of social stuff to do because the cannabis business is very ripe for a lot of different opportunities for a lot of different people who deserve them and don’t have them. So we’re very focused on how we are going to sort of set our company up so that it is incorporating the social aspects of things that we need. Especially the War on Drugs that has been particularly hard on brown people and we’re very much focused on making sure that we’re staying aware of creating opportunities almost in an artificial way. We’re getting a lot of help thinking about that and it’s the biggest deal. In setting up our company it’s run by women and my CEO as well as everyone in the company really has a deep moral compass. I think the jury is out on how we are going to be helpful. Not just philanthropically but also responsible and opportunity creating way. Philanthropy is great, but I think it’s a lot of challenge to create actual opportunity and we’re very much so focused on that.

AM: What legacy do you look to leave behind with all of the fingerprints that you have put down on all these areas?

RS: That is a tough question. I hope that I leave something behind that my kids are part of and something that continues to do good work after I’m gone and maybe I hope to leave behind a bunch of beautiful stuff.

ROCK ON WITH TETSURO ODA

When you're listening to a number of your favorite anime shows, you're probably hearing the music that has been created by Tetsuro Oda - composer, artist, producer, and guitarist. In addition to his love of anime and being a soloist, he is also a huge fan of J-Pop and created a group to continue playing this genre of music and how Rock & Roll is an endangered species in Japan. We took a moment to chat about all of this prior to his tour with his band, Roll B Dinosaur.

ATHLEISURE MAG: How did you get into music and how has your journey been in becoming an artist, composer and producer?

TESTURO ODA: I was like kid who played any instruments like toys. I had been listening to music from radio every day.

AM: How did you become an anime composer and why do you like creating music for this genre?

TO: I think, I've been blessed with opportunities. As a result of taking the offers inspiring me, I have created numbers of anime songs.

I feel motivation to join in anime, because giving me a precious opportunity to compel people to enlarge their joys, excitements and memories with my songs.

AM: What has been your favorite anime show that you have composed?

TO: The theme song of SLAMDUNK: “Sekai ga owarumade ha - Until the world ends”.

AM: You have composed for a number of J-Pop bands, how is this different than creating music for anime shows?

TO: There are basically 2 cases when I am offered for composing anime songs. One is to create songs along the views of anime, another is to create songs upon the characters of singers.

I prioritize, how my songs can complement the anime when I originally compose new songs for anime programs.

AM: How would you describe J-Pop?

TO: J-Pop, to me is like “Makunouchi Bento”, which is Japanese tradition style lunch box containing rice and a variety of side dishes.

It seems deliciously decollated genre featuring “Tasty dishes” regardless of either western foods or Japanese one.

AM: Tell us about Roll B Dinosaur - how did this group come together, are you working on a new album and will you be touring?

TO: Rock’n Roll is now sort of “endangered spices” in Japan. So this “Roll-B Dinosaur” is preservation activity of “Rock’n Roll”. “It’s only rock’n’roll but I like it!” My initial dates for our upcoming shows are Billboard Osaka (Jan 18, 2019) and Nagoya Bluenote (Jan 19, 2019).

AM: When you're not performing or making music, where do you enjoy eating lunch or dinner, do you work out and if so - where and where do you enjoy shopping for clothes?

TO: I mainly enjoy eating dishes in Shibuya, Tokyo near my own studio. I do daily exercise after waking up. Currently, shopping either in Shibuya, or at Amazon.

THE KNOCKOUT WITH BRANDI RHODES

You can also catch her this month in the debut season of E! WAGS Atlanta, where she is one of the breakout stars.

In addition to shooting her fabulous editorial for our anniversary issue, we talked with her about how she got into the industry from modeling, her start in the WWE, being in ROH/WOH, her busy schedule and how she maintains her site, Not a Basic B for her fans to get to know her more!

ATHLEISURE MAG: Tell us how you got into wrestling and what your journey was into the sport?

BRANDI RHODES: I was scouted by WWE as I was modeling in Miami, FL. They contacted my modeling agency and expressed interest. From there I had meetings and then a try out to assess my athleticism. Then I was offered a contract to come to Florida Championship Wrestling and begin training. The rest is history!

AM: We know you were with the WWE and are currently with WOH - can you tell us about your experiences with both and what you're looking forward to within this league?

BR: With WWE I was an announcer, and unable to wrestle (which is what I wanted to do all along, but once it was discovered that I was good on the mic, I was placed in that position and
unable to transition away from it). In WOH I am of course a wrestler and am able to spread my wings and grow and learn so much! I also am able to work with my husband in ROH which is so
much fun. ROH/WOH allow me to do everything in the realm of wrestling, which is very challenging and fun.

AM: What's it like being married to Cody, who is also a wrestler and is in ROH?

BR: I’m the luckiest woman in the world to be married to Cody. He is incredibly smart, ambitious, handsome and has such a big heart. It’s inspirational to get to work with him in ROH. I learn a lot from him, and I have a front row seat to this time, being the most successful of his career. In Wrestling, many times wives have to stay home and watch their spouses compete from afar. I’m grateful to be on the road with him and able to see some of his most important
matches.

AM: How do you balance your schedules as we interviewed WWE Superstar Natalya Neidhart last year and Danielle Moinet/Summer Rae last year and know that as an athlete, you guys travel a lot to global matches? When your husband is also doing these, how do you connect
and find balance?

BR: We are big on having our fun. We plan our downtime just like anyone else. This month we are looking forward to a long awaited ski trip after heading to Japan for WrestleKingdom, one of the biggest wrestling events of the entire year! But sometimes it’s a trip to Disney or Universal Studios to recharge and connect, others it’s a trip to our favorite movie theater, and other times, we have to find time to have dates on the road! Last week we had to see The Last Jedi, in New Jersey because we were working, but refused to miss out on seeing the movie right when it came out. No matter how busy our schedules are, we can always find time to do things we love together. We make it if we have to!

AM: When we looked through your blog, Not Another Basic B - we were obsessed with your accessories and style - tell us more about your blog, why you created it, and how important is it to you as a creative outlet?

BR: Initially I created Not Another Basic B as a way to express my creativity. I was very bored and just not satisfied in my previous career. I couldn’t control that at the time, but I could challenge myself by creating the blog and the content that I put into it. I loved fashion and often would have people tweeting me trying to find out what brands I was wearing on TV, and this blog made it easier to connect with these folks and get them that information! From there, the blog took off to become more than fashion. I started sharing my travels, things about my
family and my marriage and personal stories as well. Now people look to the blog as a place for everyone. From the fashionista to the wrestling fan, to the traveler! I’m so proud of what it has
become!

AM: How did you become apart of the cast of WAGS Atlanta?

BR: I was living in LA working on another TV project and Casting reached out to my management asking if I would be willing to do a Skype interview to get to know me. I did the interview and a week later was sent over a contract to do the show! It was really fast! I later
found out that I was the last member cast. They were looking for someone who had an existing fan base and presence, and thankfully I have the most loyal fan base and following from the
wrestling world and they are really excited to see me on the show!

AM: We know that the season just started, but would you come back for another season, and/or be open to future reality shows?

BR: There are a lot of factors that come into play when determining what happens next and when. But I am happy to have this opportunity to be a part of the E! family, and for viewers and our existing fans to have the opportunity to get to know us a little better!

AM: How do you stay in great shape?

BR: I train very hard daily! My workouts are 6 days a week and incorporate weight training, interval exercises and plenty of cardio. I’ve found a balance with training, it’s something that challenges me, but also that I enjoy greatly.

AM: What do your workouts look for a match versus just maintaining when you may be in a few days of downtime?

BR: I really don’t deviate from routine when I have a match coming up. I compete pretty frequently, sometimes multiple times in one week, so for me it’s important to stay consistent at all times. In the summer, however, I do tend to add runs into my workouts simply because I love running outside!

AM: What are 3 go-to power foods when you're working out versus 3 splurges when you're treating yourself?

BR: When I’m working out I love a good protein shake, my favorite is from a place called Kale Me Crazy. I’m also very big on tuna packets, because I can take them anywhere and they do the trick! Then I love almond butter. Put it on my toast every morning. Splurge foods: pizza, burgers and any kind of cake. I have a ridiculous sweet tooth!

AM: You travel frequently what are 3 beauty products that you swear by that keep your skin fresh and vibrant?

BR: I always travel with Foreo. It’s a face cleansing device (similar to Clarisonic) but they come in Travel sizes and are so easy to use and keep clean! I also need my Dermologica face lotion
which is lightweight and SPF50! Lastly, I always have a good mask with me, I tend to go back and forth between charcoal and mud masks.

AM: How do you take time for yourself?

BR: Honestly... I watch the Hallmark Channel and HGTV and grab a glass of wine in my big moments of relaxation ha! I’ll take a bubble bath if I’m feeling REALLY edgy :)

AM: What do you wear when you go out for brunch, versus when you're running errands?

BR: I definitely dress up for brunch! A sundress with jewelry and heels in always up my alley. For errands, however, most of the time I am dressed “gym fab” because I’ve either just
come from the gym, or I’m on the way to the gym! Often time that’s head to toe Lululemon or Lorna Jane!

AM: What are your goals this year in wrestling, business, the site, family etc?

BR: This year I’m hoping to chase the dream of becoming WOH Champion! I’m looking forward to taking the blog to new heights this year with some upcoming partnerships! There are a few exciting things underway so just keep your eyes and ears open for me!

AM: What charities/philanthropies do you give your time to?

BR: I’ve always had an interest anything that helps with cancer research. Over the past few years my family has known too many families that have lost kids to childhood cancer. I’m always passionate in that research and spreading the word about ways to help.

AM: Anything else you'd like to share?

FOOTWEAR.FASHION.LIFESTYLE | SOUL DXB

There are a number of events that are taking place in the first few days of December as we begin to close out your year. From music festivals Art Basel Miami and more. Sole DXB takes place in Dubai Dec 7th - 9th and focuses on Fashion, Footwear and Lifestyle by merging a number of brands and musicians together for a fun experience. Sole DXB is helmed by Hussain Moloobhoy (began his career at Saatchi London and moves to the Middle East and joined Saatchi and Saatchi Dubai where her served as its Creative Director - he took a sabbatical to explore global designs and fashion industries which led him to create a creative agency), Joshua Cox (serves as Co-Founder of Sole DXB to create a platform to help revive culture and inspire the urban fashion industry of the region), Kris Balarite (with a focus on creative design and advertising as well as freelancing with sports brand consulting, he serves as a Co-Founder of Sole DXB and is the brand creative director for the first ever basketball concept store in the Middle East known as Conquer) and Rajat Malhotra (in addition to being a partner in the Sole DXB, Rajat established a media and telecom business where he served as a CEO as well as partnering with Sunny Rahbar as a Co-Founder of the Third Line Gallery which has allowed curated exhibitions in NYC's gallery Stellar Rays).

With their creative backgrounds, we wanted to know more about what Sole DXB is as it has taken place for a number of years and is constantly focused on specific cultures that are being presented. With its mixture of art, sports, music and footwear, we took some time to find out more about this event.

ATHLEISURE MAG: Summarize in your own words what Sole DXB is?

SOLE DXB: VERY. DOPE. A celebration of hip-hop culture that has been so integral to our lives. We're simply creating an event that we, as people, wold want to go to. Just so seems there's a lot of others like us too...

AM: What is the decision behind celebrating various cultures at various points of your event from Amercan Hip Hop one year, British Hip Hop and this year, Japanese contemporary design?

SD: Culture is global, its nuance local, our individual upbringings widespread. As partners, we all grew up across different cities all around the world, but moved to Dubai eventually. During that process, Dubai had so much to offer, but there were parts of our past lives that we missed and we didn't feel that we should have to get on a place everytime we wanted to experience it. Last year, we looked at how the scene goes down in London. For many it was the year of grime, so we brought out champions of UK sounds like Skept, Stormzy, Little Simz, and Chipmunk. The year before it was very much a look at how the orginators of hip-hop, the US, did things. So we brought in legends like Mobb Deep and DMC (of Run DMC). We consider ever event an education through experience for our consumers. This year. we've looked East, especially at the real design finesse from Japan. So we're bringing out (Fragment founder and) icon Hiroshi Fujiwara to give a talk. Then we have brands like Visvim, Wacko Maria, Neihgborhood and Undercover showcasing their wares. Beyond that, there's some real godfathers of the industry coming down - we have Mass Appeal offering an exclusive international screening of (yet to be shown) Word is Bond. And that's before we even talk music (read: Kano, Pusha T, Goldlink, IAMDDB and more ...).

AM: What are the pillars of DXB offerings that attendees come to expect regradless of the theme running within the year?

SD: The best in beats, kicks, design, food and vibes, all under a big blue sky in the sun. As Bobbito Garcia, our longterm guest and friend said, "there really is nothing else like it in the world." We pride ourselves on a humble and open atmosphere. The days are smooth, the parties are bumping.

AM: What is the Dubai Design District (d3) and why has this partnership been integral to your event?

SD: Dubai Design District is our home, and moreover, the city's destination singularly dedicated to to design. It's the chosen home for the region's growing collective of creatives, artists and designers - and an institution we are very proud to work with. We have been partnered with Dubai Design District for three years now, and recently signed a further three-year contract to mark our mutual respect, and furthermore, agreement to nurture the Middle East's creative culture together. If the last 3 years have been about building our brand and establishing a global presence, the next 3 years will be about nurturing and fostering regional talent We will serve as a platform to showcase our stories to the rest of the world and to connect our international visitors to the community here d3 are central to all of this.

AM: You have a number of amazing entertainers and brands that are participating this year, who are you excited about?

SD: NxWorries (presented by PUMA), King Push, Kano, Teyana Taylor (presented by Reebok), Goldlink, IAMDDB... We have such a variety of great performers it's difficult to pinpoint just one. But there's also the talks, the brand showcases, the art. Hiroshi Fujiwara (Fragment), Jeff Staple (Staple Design), Melody Ehsani, and Peter Bittenbender (Mass Appeal Records) are all speaking amongst others. Then we have the Nike basketball tournament in conjunction with Ball Above All. And Cadillac is hosting the regional debut of Cadillac X Warhol: Letters to Warhol. FRAME is a concept store bringing down some of Japan's leading brands. Then there's' a wealth of really exciting local brands, like amongst few and ANTHLGY doing their thing. And really, that's just the start of it There is a lot to see and do.

AM: Are you already planning next year's event and will there be future cities that you will bring this to?

SD: We are always cooking up plans. 2018 will be a madness - trust us on that!

AM: Is there anything else that you would like to tell us about DXB and how those of us who may not be attending can still be a part of this event?

I MOVE ME | STEVE AOKI

This month, we attended an immersive experience with Anima Sana In Corpore Sano known as Sound Mind in a Sound Body - or better known as the 70 year old iconic Japanese brand, ASICS. This experience introduced a partnership and campaign between the sports performance brand and Grammy-nominated, DJ/producer, international entrepreneur and fitness fanatic, Steve Aoki, who serves as the face behind the I MOVE ME campaign in North America. 

The campaign allows the brand to connect with new audiences in an ever-changing fitness industry and builds upon ASICS' core philosophy. I MOVE ME aims to bring people together and inspire them to be healthy and happy through movement.

At the event in the LES, guests enjoyed a large Jump Room with 180 degree cameras tracking their movements, and of course, Aoki also showed his movements on the trampolines as well. 

The actual campaign is a sensory film that stars the DJ, set to his new Kolony track and reflects the correlation between his music and movement. In addition, their is an inclusion of energy, motivation and passion that he brings to whoever his path crosses. He also connects with other passionate people from Kinjax, Overthrow and Cobra Fitness Club. 

The campaign is shot in his home in Las Vegas, in LA and in NYC. In addition, ASICS sponsored athletes - four-time World Championship Wrestler and 2012 Olympic Gold Medalist, Jordan Burroughs (U.S.) and World Champion track and field athlete and bobsledder, and three-time Olympian Lolo Jones (U.S.) intersect with the DJ as he appears during their training routines.

"I am really excited to work with ASICS, an iconic Japanese brand," says Steve Aoki. "My life is not only about music and fashion, but also fitness, nutrition and health. I'm really grateful for an opportunity to partner with an athletic brand that not only supports the same philosophy as me and allows me to infuse my DNA into the creative process, but is also aiming to inspire and encourage others."

FIND YOUR SHIBUMI

As we grow up, many of us begin working on our life plan that consists of what is expected of us by friends and family, and influences from interactions and our informed opinions. Whether these are our actual passions or not can only be told in time. Sometimes, after following this plan, you wake up and realize that you need to hit the reset button and start from the beginning to reintroduce yourself to yourself. UNBOUND looks at this journey in understanding the ultimate self, honoring the past lessons and growing the seeds of a new life that can be truly embraced. We chatted with Steph Jagger, who found this connection through hitting the pause button and hitting the slopes, and shared her novel of self-discovery with us.

ATHLEISURE MAG: Steph, it's so good to connect with you as your book is the perfect blend of goal setting, humor, self-discovery, honesty, and weighted reflection - what are your 3 biggest takeaways from the Vertical Feat experience?

STEPH JAGGER: My three biggest take aways from my journey are:

• Moving from fear based motivation, which came with truck loads of ego, to what I call “love based motivation” – asking myself if this is going to help me grow and expand and transform versus asking myself what this will help me prove.

• I also learned so much about the feminine and what strength means for women. I used to have a masculine ideal, one that came with an “armor up and go into battle” mentality and know I see strength very differently. I see it as putting all the armor down, as being authentic and vulnerable with yourself as well as others.

• Last but not least…huge take away about the quality of red meat in Argentina. And chocolate, and wine!

AM: We fell in love with many of the people that you mentioned in the book
- do you still talk to or visit some of our faves, Tree, Joseph and the group that you met in Chile?

SJ: Of course! I just saw Tree this week. She’s still a close friend and Joseph is still very much my yoda…in fact, I call him my wizard. I wrote a fair chunk of the book at his estate in Tel Aviv and I plan on seeing him later this year. I’m still in touch with MANY of the others and of course, spoiler alert, Chris and I  are still sharing a bed!

AM: Going into the Vertical Feat you were set on check marking this goal, but did you have other matters you were wrestling with in order to find yourself besides realizing that you had been a goat who was really a Tiger?

SJ: Ultimately I wrestled with a lot of things – goat to tiger and also masculine ideal as my predominant belief system to a balanced masculine and feminine ideal. I didn’t have a clue that would be part of my journey, but that’s how the Universe works. It’s very smart. It baits you into adventures using something that will snag your ego just enough to pull you in – “Hey, over here!!! How about 4,000,000 feet???” – and once you’re on the journey the truth and the battles and the learning all unfold.

AM: What lessons can we take from Unbound when people are in a transitional experience?

SJ: I think that is the truth of transition. What you think you’re getting into is probably not what you’re getting into. I also think we need to look at transition (even positive ones) as part of the grief process. Becoming a mother means letting go of and grieving the woman you were in your teens and twenties. Becoming a person who values feminine ideals means potentially letting go of and grieving the people in your life that are still operating under a masculine-only ideal. If you’re looking to transition to the monkey bar in front of you, you HAVE TO let go of the one you’re holding on behind you.

AM: We were so happy to see that you and Chris got married and that you did embark on a different journey, what is your life like now in terms of career, where you live?

SJ: My life right now is very much based around the principal of having two things and two things only on my bucket list: Am I listening to what I am called to do…AND, when I hear it, do I have the courage to do it. That’s how I decide what projects to work on, where to travel, etc. To get technical, Chris and I currently live on the edge of a canyon on southern California with our giant black dog, Auggie. I run my coaching company from home and split time between that and writing.  Our plan…because we’ve felt the call…is to return to the mountains in the coming months. Our hope would be to move to Colorado or BC by the summer-time.

AM: Do you see yourself taking on other challenges of this nature?

SJ: Yes and no. I’ll refer back to question five…if I’m called to go on another adventure of this nature, I hope I’ll heed the call. That said, I just don’t feel it…I feel other adventures rolling towards me. More books, perhaps a career in speaking, MORE travelling for sure but perhaps with less of an agenda. So yes and no.

AM: We loved that you came to terms with being someone who could accept their femininity while also embracing an aggressive nature and that you could be both - why do you think that some women find that to be difficult?

SJ: I think a lot of women find that to be difficult. The idea of having it all. The concept of balance. The desire to be aggressive, persistent, ambitious, etc. with a career, at the same time as being a friend, a mother, a daughter, a sister…roles that often require a fair bit of nurturing, slowing down, etc. I think that’s the question of our generation – how do we first choose what it is we want (with consciousness and a lack of guilt) and then how do we actually make that happen in the real world…hint hint…this might be a theme of my second book.

The why behind it all feeling difficult has everything to do with the way our society is structured. The expectations placed on women (and men for that matter) to play certain roles, the patriarchical ideal. I could go on about this but I think it’s built into our collective thought process.

AM: If you were able to do this trip all over again, what would you change?

SJ: Nothing. Not a thing. It all lead me to where I am and who I am today and I’m very proud of that. From a technical standpoint I probably wouldn’t have planned as much so I could have responded better to the weather as it happened. Other than that…nothing.

AM: What mementos did you keep from your trip as a means to remember the experience?

SJ: What do I have to remember the trip…um, well, a book for starters! Ha! I don’t tend to lug mementos around, but I do have some gorgeous photos, a husband, and a small Japanese change purse that help me remember it all.

AM: What was your favorite mountain/resort to ski at during the Vertical Feat and what was your favorite place/experience that you went to unwind while you were on this journey?
 

SJ: Favorite resort – SO HARD. I still LOVE Whistler/Blackcomb, but Jackson Hole, and Alta are also standouts. I’ll always remember Cerro Catedral in Argentina, because it’s where I met Chris and Happo One in Japan is out of this world – in fact, the whole Hakuba Valley in Japan is out of this world. I’ll also make the latter the fav place to relax. A ski and then an onsen (Japanese hot baths) at the end of the day?!? You can’t get much better than that. Unless of course, you’re at the Scandinave Spa up in Whistler – that place is also to die for when it comes to pampering and relaxation.

AM: We love the concept of Shibumi and how you found it at various times, what is your Shibumi moment now?

SJ: My Shibumi moment now is the book tour. It can’t be perfect, travel plans get messed up, I’ve got a bit of a sore throat going at the moment, I lost my ski socks somewhere...BUT, I feel like my energy is aligned with the book and that when I go out and connect with people at event and local bookstores there’s an effortless perfection to the interaction and exchanges that are happening. That makes me very happy. It’s total Shibumi!

AM: What was the process like in writing this book and how is your book tour going?

SJ: Well, I just told you a little about the book tour and I think I would say similar things about the writing process. It’s utter shibumi – it’s a glorious mess, it's throwing words around and cutting and chopping and praying and surrender and faith that it will all work out in the end. It's discipline but also freedom. 

I loved the writing process, the concept of learning and honing my very rough skills as a writer. I hope I get to keep doing it. What a gift of an opportunity I’ve had to unravel my own narrative and sew it back up together again. If that’s not Shibumi, I don’t know what is!
 

AM: What's next for you?

SJ: What’s next for me is a question  I get a lot – most times it comes in the form of  “What’s on your bucket list” – there are two things – One, am I listening for the call to adventure. Two, do I have the courage to say yes when I hear it. I really do feel a second book coming to the surface and as I mentioned before, Chris and I would love to find the perfect home in the mountains. And a vacation! Maybe a visit to Greece to see my dearest Joseph! He just built a new home there and we’ve been dying to see it. Just thinking of the sun and calamari makes me drool.

AM: What would you tell someone who decided to go on a path of self-discovery (not necessarily in the same manner that you did) so that they could expect many of the feelings that you came to grasp with?

SJ: This is such a huge question. First I would ask them if they had three or four hours and a good bottle of wine or two. Then I would sit down with them and I would read them Joseph Campbell quotes for hours. I would tell them “you must let go of the life you have planned, as to accept the one that is waiting for you” and I would also go all Sue Monk Kidd on them and tell them that “the truth may set you free, but first it will shatter the safe, sweet way you live.” Then I would tell them to leave the rest of the wine with me. After that, I’d hand them my phone number and tell them they’ve got an open line and to call when ever they want, I would say, “Search for the best, most wildest version of you and when you find it grab it and don’t let go. Oh…and you know that when you’re on the monkey bars of life, you MUST let go of the one behind you in order to grasp the one in front of you…you know that right???” That’s what I’d say.
